Answer: Frodo

You can find this on page 70 of 'The Fellowship of the Ring'. Note: The edition I have of the trilogy is the newest, small-size edition by Ballantine books with the movie pictures on the front and the backs. I specify this because there are many varying editions of Tolkien's works and the page numbers do not match.
2. From 'The Two Towers': who says, 'These are indeed strange days. Dreams and Legends spring to life out of the grass.'?

Answer: Eomer

Eomer says this on page 28 of 'The Two Towers' when Aragorn reveals himself to Eomer.
3. From 'The Fellowship of the Ring': who says, 'I don't keep water in my pockets.'?

Answer: Frodo

Look at page 81 of 'The Fellowship of the Ring'. It is Frodo's reply when Pippin asks him where the water is.
4. From 'The Two Towers': who says, 'Only a few hours ago you were unwilling to sit on a horse. You will make a rider yet.'?

Answer: Legolas

On page 39 of 'The Two Towers', Legolas comments on Gimli's strange, new-found desire to mount a horse.

Prince Imrahil says this about the destruction of Minas Tirith on page 163 of 'The Return of the King'.

You can find on page 152 of 'The Return of the King' that Legolas does indeed say this about the city of Minas Tirith. Gimli just before had remarked on the quality of their stone-work.

Answer: Sam

This is one of my favorite quotes. Sam says it in the 'Of Herbs and Stewed Rabbit' chapter when he is trying to get gollum to catch some rabbits.

Answer: Aragorn

The quote is the first line of the chant of Beren and Luthien that Aragorn told to the hobbits on page 216 of 'The Fellowship of the Ring'.
9. From 'The Fellowship of the Ring': who commands, 'Bring out the ring, Frodo!'?

Answer: Gandalf

In the movie, Elrond tells Frodo to show the ring to the council, but in the book it is Gandalf who says this.(see: page 277 of 'The Fellowship of the Ring')
10. From 'The Fellowship of the Ring': who advises, 'Do not meddle in the affairs of wizards, for they are subtle and quick to anger.'?

Answer: Gildor

Merry later quotes this bit of advice first given by Gildor to Frodo in 'The Two Towers' so as to warn Pippin. Very good advice indeed.
