How did the "Edzell Blue" vegetable gain its name?

The Edzell part is from the town of Edzell in Scotland and the blue part is from the purple-blue color of the skins! Anthocyanin pigments are what make the blue color of the potatoes along with eggplants and blackberries. Apparently, the flavor is not too different from any other potato.
