On the US quiz show, 'Jeopardy', do the losing contestants get to keep the dollars that they score?

No they don't, but they do get a consolation prize of $3,000 for second place and $2,000 for third place. Travel and lodging are not covered by the show so these prizes help offset the expense of participation on the show.

Sadly for the losing contestants, the answer is "No!"

Instead, consolation cash prizes of $2,000 for second and $1,000 for third are awarded. This has been the case since May of 2002.

In August 2023 the consolation prize was increased by $1000. It was $2000 for second and $1000 for 3rd up until this time. The real question is, what if the winner wins with less than $3000, would be receive a minimum or is it possible s/he could make less than the second place player?

No, Winners receive no minimum. 4 times there were winners who won only 1 dollar.
Four contestants on the Trebek version share the record for winning a game with the lowest amount possible, at $1. The first was U.S. Air Force Lieutenant Colonel Darryl Scott, on the episode that aired January 19, 1993. The second was Benjamin Salisbury, on a Celebrity Jeopardy! episode that aired April 30, 1997. The third was Brandi Chastain, on the Celebrity Jeopardy! episode that aired February 9, 2001. The fourth was U.S. Navy Lieutenant Manny Abell, on the episode that aired October 17, 2017

In the first three cases, there were no consolation prizes, but in the fourth, there was. So, Manny ended up winning only one dollar as the champion, and the runners-up received 2000 and 1000 dollars, respectively.
