Choron sauce! Adding tomato to Hollandaise gives a bit of sweetness to the cause. Choron is a sauce added to a wide variety of meats adding an extra level of yum!

It is called Choron Sauce and it is essentially a Béarnaise sauce with tomato purée added instead of herbs.
