It was incorporated into the British Coat of Arms when Scotland and England first shared a king, James the First, in 1603. Edmund's shield was red and gold with a lion's head, which is difficult to see in the movie.

I think it was a great move on Peter's part, although I do wonder what happened to the Gryphons afterwards. We don't really see them in the thick of the battle. In fact, we only see a few of them (2, actually) when the battle has relocated to the rocky area at the side of the open field.

When the Queen demanded Edmund's life, as allowed to her by the ancient magic of Narnia, Aslan offered himself up in sacrifice in exchange. When he went to the stone table to be sacrificed, the Queen had him bound and had his mane shaved to humiliate him, before killing him. She wore this into battle, as a symbol of her triumph over him. She was shocked when he returned to life (mane intact) due to the selflessness of his sacrifice and his purity of soul.
