Answer: water, earth, air

This is the very first English line in the movie. It is translated from Elvish.
2. "And into this ring he poured his cruelty, his malice, and his will to dominate all life." Who is "he"?

Answer: Sauron

This line was spoken during the opening speech, while explaining how the ring was created.
3. "And for ____ thousand years the ring passed out of all knowledge." What number goes into the blank?

Answer: two and a half

This line was said right after Isildur was killed, and the ring fell to the bottom of the river.
4. "For five hundred years it poisoned his mind." What is "it", and who is "he"?

Answer: the ring, Gollum

This line was said when Gollum found the ring, while describing what the ring did to him.
5. "It was picked up by the most unlikely creature imaginable." What was this creature, and what was its name?

Answer: a hobbit, Bilbo

This line was said near the end of the opening speech, while telling of how Bilbo found the ring.

This is Gandalf's first line in the movie (unless you count his singing), and like I said in the question, it is one of my favorite quotes in the entire movie.

Answer: the hobbit children

I thought this line was pretty cute, because, according to the book, Gandalf is known in the Shire for his "magic" (the fireworks).
8. Who said "Hobbits? Four Hobbits!"?

Answer: the gatekeeper at Bree

After hearing Frodo's knock, the gatekeeper at Bree looks through the tallest window, then seeing no one, moves to the shorter one, and sees the hobbits. He then asks them what they want, and after they have replied, he opens the gate, and says this line.
9. "They spent so much time arguing the withertos and the whyfors that the sun's first light crept up over the top of the trees....Poof!And turned them all to stone." Who is Bilbo referring to?

Answer: the trolls in one of his adventures

In this scene, Bilbo is telling a story of one of his adventures to the hobbit children at his birthday party.

This may be one of the most well known lines in the entire series. It is mentioned in the book a few times, as well as in the animated version of the movie, and in the live action movie.

Answer: Sam

Sam said this line, right after Gandalf had pulled him in through the window. Sam also claims to have "not been dropping any eaves.", which is another of my favorite quotes.

Answer: Frodo, Bilbo

Frodo begins to tell Sam what Bilbo used to say, right after Sam has gone "the farthest away from home he's ever been". When the quote gets to Frodo's name, Bilbo's voice takes over, and finishes it.

Answer: Saruman

This line is said by Saruman, when he is talking to Gandalf. Saruman has turned to Sauron's side, and will try to convince Gandalf to do so as well.

Answer: Barliman Butterbur (the owner of The Prancing Pony)

Barliman Butterbur says this, when Frodo, Sam, Merry, and Pippin arrive at The Prancing Pony. This is when Frodo is forced to come up with a new name for himself.
15. Another easy one, but once again, one of my favorites. "You draw far too much attention to yourself, 'Mr. Underhill'." Who says this, and who is 'Mr. Underhill'?

Answer: Strider (Aragorn), Frodo

Frodo has just come back from the shadow world, haven fallen, and been "lucky" enough to have caught the ring on his finger. Strider saw this, and knows all about Frodo and his real name and quest.
