Cloud retold the story yes, but in the wrong way. He was telling the role of Zack, not himself. He was actually just the regular soldier that accompanied Sephiroth, Zack, and Tifa.

You fight some of the Weapons yes, but you never kill them. The Ultima Weapon you fight in Mideel and then it runs away, and the Diamond Weapon you fight in Midgar but it gets killed by the Sister Ray. The others are optional, so you do not have to kill any.
