Sinews are tendons and tissues that connect muscles to bones.

God showed Ezekiel that these bones were similar to the house of Israel. Israel had given up hope that God cared because of all the destruction they faced. However God promised to restore them like He did for the valley of bones. He promised to bring them back from captivity and into their land again.(Ezekiel 37:1-14, KJV)

It further states that they will be busy for seven months just burying the dead of their enemies. In verse 17, we see the animals and birds partaking of the fleshly sacrifice that God provides them with. (I don't think I would like to be one of Jerusalem's or Israel's enemies.)
