1. Which ship is fastest out of the following?

Answer: A-Wing

It could be debated that the V-Wing moves faster when it activates its Scram Jets, but the A-Wing has the fastest cruising speed. The A-Wing is used for reconnaissance missions and hit-and-run raids.
2. Which ship comes with an R2 unit?

Answer: Y-Wing

The X-Wing and Y-Wing both come with R2 units. R2 units repair damage over time until they're destroyed (you'll hear them squeal when they're destroyed). Other ships just have to put up with the damage they receive and make the best of it.
3. Which ship will always be used if there's an AT-AT in the mission?

Answer: Snowspeeder

There are two ways to destroy an AT-AT: pour lasers into it until it explodes (it requires over a thousand lasers blasts), or to wrap it up in a Tow Cable. The only ship fitted with a Tow Cable is the Snowspeeder, which is why whenever there's a mission with an AT-AT in it, you'll be flying a Snowspeeder. Even when you unlock every ship for every mission (supposedly), you cannot use any other ship on a mission with an AT-AT.

The only exception is the Naboo Starfighter, which must be unlocked using secret codes. If you use the Naboo Starfighter in an Snowspeeder mission, you'll be hard pressed to take down any AT-ATs that you may be required to destroy, before the AT-AT reaches its goal and destroys the target you're trying to protect.
4. Which ship cannot perform rolls?

Answer: Snowspeeder

Both the Snowspeeder and the V-Wing are both low altitude atmospheric craft. Neither can perform a complete roll or flip.
5. Which ship is fitted with an Ion Cannon for one mission?

Answer: X-Wing

In chapter 9, Rescue on Kessel, you have to disable a Hover Train, carrying the imprisoned Wedge to his doom, hence your X-Wing's Proton Torpedoes are replaced with an Ion Cannon. The only other ship what would work for this mission would be the Y-Wing, as you need an Ion Cannon to disable the train (you can't destroy a single section or else the mission will be a failure).
6. Which ship is fitted with Scram Jets?

Answer: V-Wing

The Scram Jet gives the V-Wing a short burst of speed. This can be used to get out of a sticky situation, or to quickly get to your next objective. When boosting, maneuverability is greatly reduced, so be sure not to point the nose of the craft at a mountain when you activate the Scram Jets.
7. Which ship uses Proton Bombs?

Answer: Y-Wing

The Y-Wing is used for bombing runs. Its Proton Bombs can tear through most buildings, and with twenty bombs per life, the Y-Wing can do a lot of damage.
8. Which ship can close S-foils?

Answer: X-Wing

When closed, the X-Wing will go faster, but you will have to open the foils back up again to use your lasers. This is good if you have to get somewhere, fast, to protect something.
9. Which ship uses concussion missiles?

Answer: A-Wing

Concussion missiles are the fastest warheads in the game. They act like Proton Torpedoes, but are faster and do less damage. Normally you'll want to take out pesky TIEs or bombers with these and destroy the heavy machines, like AT-STs, with your lasers. The A-Wing is too maneuverable anyways for something like and AT-ST to actually hit, while a TIE Interceptor could pose a real threat.
10. Which ship fires Cluster Missiles?

Answer: V-Wing

Each Cluster Missile breaks into six missiles after being launched, which don't do much damage individually (barely enough to destroy a single fighter, each), and are normally too spread apart to do any real damage against larger targets. This is why you'll definitely want the Homing Cluster Missile Upgrade found in mission fifteen (Moff Seerdon's Revenge).

After splitting, each missile will seek out a target, automatically, making it especially effective at clearing out large amounts of enemy fighters quickly.
