Answer: Cacio e pepe

To make cacio e pepe cook spaghetti or linguine until al dente and drain well.
Melt butter in a saucepan and add ground pepper. Heat for a little while then add a ladleful of pasta cooking water and bring to the boil. Reduce the heat, return the pasta to the pan and sprinkle in grated Parmesan. Stir well, then add more grated Parmesan, tossing the pasta until you have a smooth, silky sauce. Serve immediately.
