The "Frankfurter grüne Soße" (Frankfurt green sauce) is basically an emulsion of egg yolks, oil, vinegar, salt and pepper, with the addition of many fresh herbs. Not just any herbs, of course! According to the purists, imperative for a real green sauce are seven particular herbs, namely parsley, cress, chervil, sorrel, chives, borage and salad burnet.
The people of Frankfurt are so proud of their national dish that they erected a monument to honor it: a composition of seven little plexiglass greenhouses - one for each herb.
The green sauce is always served cold, and its fresh taste and rich aroma harmonize perfectly with roast beef, boiled potatoes, hard-boiled eggs, steamed fish, and much more.

Kulfi (solid creamy ice cream) is supposed to have its origin to the Indian Mogul emperor Akbar who devised a process utilizing a combination of saltpeter and the ice brought down from the Himalaya's to make the kulfi. The kulfi's recipe is mentioned in a book "Ain-e-Akbari" written 400 years ago by Akbar's biographer Abul Fazal. Kulfi is made by boiling milk having at least 10% fat until it is half and then a tea spoon of corn flour is added to it and it is boiled more until it turns into a paste.

Then the dry ingredients like cardamom, saffron, pistachio, coconut, sugar or artificial sweeteners are added according to taste. Unfortunately, it is this rather strange sounding combination that has been an Australian icon since the early 1920s, starting in South Australia before spreading throughout the country. The pie is placed upside down in the pea soup so that it doesn't sink upon cutting, and is traditionally topped with tomato sauce. Some say that the popularity has waned, but to most Aussies, it is a right of passage that is never far from our hearts.

To make pork bones and puha - or a 'boil up' as it is commonly known as, bring a pot of water to the boil and simmer your pork bones until they are nearly done, add potatoes and kumara (sweet potato), and when those are almost cooked, toss in your puha. Serve once the puha is tender. According to my Mum, you have to give this dish a couple of hours of cooking for the flavors to develop, and you must never, ever stir it during cooking.
