A Spanish omelette is simply a dish consisting of a basic egg omelette but with added potatoes. It is usually called tortilla de patatas in Spain.

The potatoes should be thinly sliced and then fried in olive oil, together with similarly sliced onions, and cooked until soft. Once they are soft, they should then be removed and added to raw eggs. The whole mixture is beaten and then returned to the pan to be lightly fried on both sides. At this stage other ingredients such as red peppers or other vegetables may be added if desired. The finished dish can then be eaten either hot or cold as preferred.

Scrambled eggs are nice and easy to make for terrible cooks. Just beat up a couple of eggs with a bit of milk, salt, pepper. Before putting into a warmed and buttered pan, add a chopped up cheese slice to the mix. Then fry the lot, constantly stirring (otherwise it'll burn) until thickened to the degree you like. You can add anything to the mix before frying really - chopped up pieces of bacon, tomatoes and so on. Serve with a couple of slices of hot buttered toast, but not on top of the toast, because no matter how much you drain your scrambled eggs, they make the toast soggy.
