Answer: Spanish omelette

The anagram indicator in this clue is the word 'cooked' which not only suggests that the letters of 'HOMELESS PATIENT' are to be restructured but also fit into the theme of the clue.

A Spanish omelette is simply a dish consisting of a basic egg omelette but with added potatoes. It is usually called tortilla de patatas in Spain.

The potatoes should be thinly sliced and then fried in olive oil, together with similarly sliced onions, and cooked until soft. Once they are soft, they should then be removed and added to raw eggs.
