Quiz Answer Key and Fun Facts
1. The cake is named for the Black Forest region in the Southwestern part of which European country?

Answer: Germany

'Schwarzwälder kirschtorte' (as it's called in German) is named for the Schwarzwald or Black Forest region in Germany. The physical area got its name because the trees grow so thick that sunlight has a hard time penetrating the boughs.
2. The traditional Black Forest cake requires which of these red fruits? They can be used in both the filling and the topping.

Answer: Cherry

Most people use sour cherries in the traditional recipe although sweet cherries can be substituted. They're full of compounds that stave off inflammation, have antiviral and antibacterial properties, help support heart health, and even fight cancer. All that, and delicious, too!
3. Although many American versions of this recipe do not use any alcohol in the making of it, the traditional cake requires it to be considered a true Black Forest Cake. Which of these potent potables is in the ingredient list?

Answer: Kirsch

Kirsch is a clear, colorless fruit brandy traditionally made from double distillation of sour cherries. This is where the second half of the cake's German name (Kirschtorte) has its origins.
4. The cake recipe calls for the use of lemon zest. What is this?

Answer: The outermost rind

The zest of the lemon gives a strong, citrus flavor due to the oil in the rind. The zest can be removed using a vegetable peeler, a zester, or a sharp knife. Stay with the yellow outer rind; the white rind just underneath can be bitter!
5. There is no leavening agent, such as baking soda, in the Black Forest cake. Instead it is up to the baker to add air to the ingredients in such ways as whipping the egg whites. What is the term used in cooking to denote this?

Answer: Aerating

Interestingly, this term can be used for a variety of ways to incorporate air. Sifting dry ingredients through a mesh is a common practice. Whipping with a whisk or tool to make the batter contain more air is used in making this cake. Lastly, even exposing wine to air or "letting it breathe" is considered aeration.
6. The sponge-like cake, to be considered a true Black Forest, must contain at least 3% of which ingredient? (Hint: it is of a quite dark color)

Answer: Chocolate or cocoa

Traditional recipes always called for shavings of semisweet or dark chocolate. Over the years, however, people have begun using cocoa powder. Cocoa powder can actually give the cake a stronger chocolate taste because of its ratio of cocoa solids to cocoa butter.
7. Black Forest cakes can use buttercream frosting or whipped cream. When making whipped cream from scratch, which of these dairy products is it best to start with?

Answer: Heavy cream

The heavy milkfat content in heavy cream (around 36%) is what makes it beneficial to the recipe. A great tidbit about whipped cream is that if there's some left over you do not need to throw it away! You can put dollops of it on a parchment lined baking sheet and freeze it until it solidifies then transfer to bags or containers.
8. How many layers does a traditional Black Forest cake have?

Answer: Three to Four

Over the years, chefs have made Black Forest cupcakes, sheet cakes, Yule Logs, cheesecakes, and many more varieties. However, the original torte calls for three levels. Over time, the rules have 'bent' a bit to allow four if necessary.
9. Decorating the top of the Black Forest cake is entertaining as well as aesthetically pleasing. Cherries and chocolate curls are among the most popular. What common kitchen tool can be used to easily create these curls?

Answer: Vegetable peeler

Chocolate can be melted and then poured over wax paper to cool. After the chocolate is cooled and hardened, a vegetable peeler can be used to make thin, flat shavings that curl easily. Refrigerate curls until they are ready to use!
10. The Black Forest cake is so popular that there is even a 'holiday' dedicated to it? What day is officially National Black Forest Cake Day?

Answer: March 28

If you feel making a true Black Forest Cake is too hard for this day, you can always try a "simplified" version of it. Slice a chocolate pound cake or brownie, top each slice with red sour cherry topping, add whipped cream atop and on the sides. If you want to, serve your cake with a liquor glass of Kirsch. However you do it, Happy Black Forest Cake Day!
