The Spanish Pavillion of Harrison, New Jersey, opened as the only Spanish restaurant in the area, but at the time of filming, there were forty other Spanish restaurants. Gordon Ramsay saw the bickering family members, a head chef that quit, a dead lobster in the tank, a refrigerator with food gone bad, and the staff dressed up like they were at a funeral parlor. Ramsay had bad lobster bisque, dry chicken swimming in oil, and burnt paella.

Ramsay didn't like anything from the West Babylon, New York restaurant. The macaroni and cheese was pre-made, the calamari was soft, and the burger was not seasoned. The restaurant had a problem with lack of menus, items and supplies. During a second service, Ramsay shut the kitchen down after he saw mushy broccoli being sent out.

The restaurant was named after the late brother of a former construction owner. Ramsay had crab cakes with bits of plastic, a tough filet mignon, and acidic lobster ravioli. He also witnessed owners and a chef who didn't care, a menu with limited items and a kitchen with moldy food. Even after Ramsay sought the unpleasant reactions of former PJ's customers, the chef didn't care and was fired after butchering specials and walking out during service.

A few months later, the owner closed the place and went back to construction.

The Carlstadt, New Jersey restaurant, was a family-run business that tried to be Irish. Ramsay had French onion soup that tasted like dishwater, a shepherd's pie that wasn't anything close to what would be served in Ireland, and a fisherman's platter with bad scallops. For the first time in history, Ramsay shut down a restaurant before service began. During Ramsay's visit, food took a long time to come out, despite help from an outside chef.

The first revisit of season four saw Mojito, Flamangos, and Bazzini. Of those three, only Mojito was still open by July 2011. A second revisit saw Lido di Manhattan, Anna Vincenzo, and Le Bistro. Anna Vincenzo was closed when Ramsay revisited while the other two were still open.

During the season, Ramsay visited Davide in Boston, Providence's Downcity, and Cafe Tavolini of Bridgeport, Connecticut.

Ramsey had to deal with a chef who wouldn't listen to the owner and who sent out a salad with a vinaigrette that was too acidic, a seafood crepe that wasn't cooked right and a quiche that was microwaved just prior to serving. The owner's children were constantly fighting.

The restaurant reopened with a crepe station and another service that resulted in tables walking out after waiting too long.

Answer: Radiologist

The restaurant's owner was Una Morris, a three-time Olympian turned radiologist, whose own son was critical of her managing and nitpicking. Ramsay tried the Jamaican patties with an awful jerk sauce, bland chicken that was too dry and oxtail with too much cartilage. Also criticized were everything placed in bags, salad in martini glasses, and food cooked the day before.

Capri was a messy Italian restaurant owned by lazy twin brothers. Ramsay wanted to shut down the kitchen after he discovered chicken tenders defrosting on a steam table, a food poisoning risk. After a confidence booster at a gym and a makeover, the restaurant opened for lunch, which didn't happen before the relaunch.
