The goes like this: the year was 1889, and the queen of Italy, whose name was Margherita, was visiting the city of Naples. Italy had become a new country only thirty years before. Many small parts had been to make one big country. While the queen was in Naples, a well-known pizza maker named Raffaele Esposito was asked to food for her.

Esposito wanted to serve something that would not only taste good but also Italy itself. At that time, pizza was a dish mostly eaten by the working people of Naples, not something served to . Still, Esposito saw an to make it special. He decided to create a pizza that used three simple with a powerful meaning. The bright red of the tomatoes stood for the red stripe on Italy's flag, the soft white of the mozzarella cheese matched the white stripe, and the fresh green basil leaves matched the green stripe. Together, they showed the colors of the Italian flag, which had become a symbol of national pride.

To honor the queen, Esposito named this creation Pizza Margherita. The story says that Queen Margherita enjoyed it so much that she sent him a letter of thanks. Whether or not the letter was real, the tale spread quickly. The pizza became famous far beyond Naples and came to represent Italian flavor and .
