3. By what name is soy bean curd commonly known?

Answer: tofu

Borrowed from the Chinese "doufu" ("curdled bean"), tofu is a Japanese word that denotes a food made by coagulating soy milk (generally by adding calcium sulfate), and then pressing the curds into solid blocks of varying firmness. Widely used in the cuisines of East and Southeast Asia, tofu is a very ancient product, having been made and consumed in China for over 2000 years.

It was first produced in the West towards the end of the 19th century, and in more recent years has become very popular as a source of protein in vegetarian and vegan diets, or as a substitute for eggs or dairy products. Having little flavour of its own, tofu is very versatile, and provides a foil for more assertive ingredients, such as spicy sauces and condiments.

The three incorrect answers are all food-related Japanese words: miso is a fermented soybean paste, nori a kind of edible seaweed, and fugu the notorious and potentially lethal pufferfish.

5. If you were having a barbeque, which of the following cuts of beef would likely produce the toughest steak if you prepared it on your grill?

Answer: Chuck

Just about any cut of beef can be prepared on the grill, but some are more suitable than others. Chuck steak, which comes from the neck and shoulder of the cow, is a flavorful, but rather tough, cut of beef. For this reason, it is most often used in stews, or ground into hamburger, rather than grilled.

10. Three of these card games award victory to the player or team amassing the most points, but in which of these games do players try to avoid accumulating points?

Answer: Hearts

Hearts and Spades are both trick-taking card games, whereby each round of the game involves one player winning that round's "trick". While the object of Spades is to gain points and be the first team to reach 500, Hearts is the game, of these four listed, where points are not wanted.

The winner of Hearts has the lowest number of points when one or more other players reach(es) 100 points. The winner of Cribbage is the first player to get 121 points, with points awarded for certain cards and card combinations that are dealt and played. Canasta is a card game where points are acquired by creating "melds" - at least three cards of the same rank, and the winning team reaches 5,000 points first or has the higher point total if both players/teams reach 5,000 points.
