Quiz Answer Key and Fun Facts
1. On cold winter days, goulash, an easy dish, choke full of spices, is ideal. For my goulash all I need is a nice cut of beef, onions, potatoes, a small tomato, salt, pepper, bay leaf, marjoram and another ingredient which is vital to the recipe, for color and flavor. What am I forgetting?

Answer: Paprika

Goulash is a Hungarian stew or soup, made originally by herdsmen, from cured beef which was kept in sheep's stomachs and could turn into a meal with the addition of water and spices over a fire. More ingredients can be added, like carrots, garlic, bell peppers, wine, even sauerkraut. Paprika gives goulash its characteristic red color and smoky flavor.
2. Caprese salad is a summer favorite, when the ingredients are at their best. I have tomatoes, fresh mozzarella cheese, olive oil, salt and pepper. I'm missing a herb without which I can't make my caprese salad. Which herb is it?

Answer: Basil

This very simple salad is named after the island of Capri, on the Gulf of Naples. It has only three ingredients, tomatoes, mozzarella and basil, the three colors of the Italian flag, much like a Pizza Margherita. Some people add balsamic vinegar to the olive oil dressing and it is usually served as an antipasto (starter) and not a side salad.
3. Devil's Food Cake is a recent addition to my recipe book, baking is not my forte. Since the first attempt was successful, I decided to have another try. I have boiling water, eggs, flour, dark brown sugar, baking soda, butter and vanilla extract. What rich and dark ingredient am I missing?

Answer: Cocoa powder

The generous use of cocoa powder is what gives Devil's Food Cake its rich color and texture and distinguishes it from a regular chocolate cake. This 100% American dessert, first appeared in cookbooks at the beginning of the 20th century, in the Southern United States.
4. I am not very dexterous when it comes to making sushi but I did attend a seminar a few years back. I stand in front of my kitchen counter with my bamboo mat, sushi rice, rice wine vinegar, fresh salmon, avocado, wasabi and pickled ginger. I have this feeling that something very important is missing. What can it be?

Answer: Nori sheet

A nori sheet is a rectangular sheet of dried edible seaweed which is used in Japanese sushi. A variety of ingredients, like raw or steamed seafood, vegetables, even fruits, are rolled in nori and rice, accompanied by hot wasabi and pickled ginger. Sushi without the seaweed is called nigiri and without the rice is called sashimi.

Unfortunately, I only know the European version of sushi which is very different from the Japanese, from what I hear.
5. Moussaka is not one of my favorite dishes, it's complicated, time consuming and heavy. I very rarely make it and today I see that I have minced meat, tomatoes and tomato paste, onions, parsley, allspice, and milk, flour and butter for the béchamel sauce. What is the essential vegetable I don't have?

Answer: Eggplant

Moussaka comes from the cuisine of the former Ottoman Empire which included many countries in Southern Europe and the Middle East. Its basis is layers of sauteed aubergine (eggplant) and/or potatoes and minced meat in tomato sauce, either beef or lamb.

The Greek version includes a thick layer of béchamel sauce on top of the meat and aubergine layers. There are ways to make it healthier, I personally grill and don't sautée the eggplant slices, use mushrooms instead of meat and cover with a thin layer of Greek yogurt and grated low-fat cheese.

Not everybody in my family likes it this way.
6. I often make quiches, they are simple to make and ideal for lunch with a green salad and a glass of white wine. For the quiche Lorraine I'm making today I need the pastry crust, cheese, creme fraiche, eggs, nutmeg and what else to make my dish complete?

Answer: Bacon

A quiche is a typical French dish which consists of an open face pastry crust with a variety of savoury ingredients mixed together with eggs, creme fraiche, spices and herbs. The quiche Lorraine is a very common version from the French province of Lorraine and it was originally made with smoked bacon and later on gruyere cheese was added to the recipe.

The word quiche comes from the German word Kuchen which means cake. The quiche originated in Germany but became a favorite French dish.
7. Tabbouleh is a delicious, fragrant dish which is very easy to make if you have the right ingredients. I have parsley, coriander, mint, tomatoes, onions, lemon juice, olive oil, salt and pepper but I don't have the grain that will make it all come together. Which is the missing grain?

Answer: Cracked wheat or couscous

This Levantine dish is traditionally a parsley salad in which sometimes the cracked wheat (bulgur) or couscous is added. In Europe and other places where tabbouleh is considered an "ethnic" dish, it is made with more grain and less parsley whereas in Lebanon and the Middle East the parsley prevails.
8. My daughter asked for brownies today but I'm afraid I will not be able to bake a batch. I know I have sugar, flour, bittersweet chocolate, butter and walnuts. Which absolutely necessary ingredient don't I have?

Answer: Eggs

This universally liked dessert was first made in Chicago at the beginning of the 20th century, when a wealthy socialite wanted a small dessert, something more elegant than a slice of cake, for her circle of friends. They were made by the baker at the Palmer House Hotel.
9. Paella Valenciana is a Spanish favorite dish which I make often, especially when friends are coming. I have chicken, chorizo sausage, shrimps, mussels, onions, tomatoes, green peas, bell peppers, rice and herbs but I don't have the one ingredient that gives paella its characteristic color and aroma. What is missing?

Answer: Saffron

The crimson stigmas of Crocus sativus produce the spice saffron which gives paella the characteristic yellow color and slightly metallic taste. Spanish people consider paella a regional dish from Valencia, a region in the East coast of Spain, and the rest of the world consider it a national Spanish dish. Paella is the Spanish name for the large, flat pan in which the dish is cooked.
10. My friend Harry gave me this recipe for dark whole wheat bread which I bake once or twice a month and freeze. I have dark whole wheat flour, lukewarm water, honey, salt and rosemary. What necessary ingredient for making bread is missing?

Answer: Yeast

A cooked mixture of some type of ground grain or seed and water probably existed in most civilizations as early as the Paleolothic era, some 30,000 years ago. It was in the Neolithic era, around 10,000 years ago, when grains became a staple in the fertile Mesopotamia. Nowdays, bread can be made almost out of every grain, even from gluten-free grains like spelt, amaranth or buckwheat.
