1. "Captain, take cover, there's a Samurai after me!"

Answer: Sulu

This quote comes from the episode "Shore Leave" in the first season, in which the crew is exploring a planet where their thoughts become reality. Thus Captain Kirk meets an old flame again, Ensign Rodriguez gets shot at by a low-flying airplane and Doctor McCoy sees Alice and the White Rabbit. Sulu utters this word of warning to Captain Kirk as he bumps into him in his rush to get away from the Samurai he imagined and who is now chasing him.
2. "All this power surging and throbbing, yet under control. Are you like that, Captain?"

Answer: Lenore Karidian

This is from the episode "The Conscience of a King" in season one in which Lenore Karidian tries to seduce Kirk because he is a witness to her father's crimes and she intends to kill him. The conversation continues:
Lenore: "All this power at your command, yet the decisions that you have to make..."
Kirk: "Come from a very human source."
Lenore: "Are you, Captain? Human?"
Kirk: "You can count on it."

This is actually part of the same (outrageous) conversation between Lenore Karidian and Kirk in "The Conscience of a King":
Lenore: ... "You haven't answered my question about the women."
Kirk: "What would you like to know?"
Lenore: "Has the machine changed them? Made them just people instead of women?"
Kirk: "Worlds may change, galaxies disintegrate, but a woman always remains a woman."
Lenore: "All this and power too. The Caesar of the stars and the Cleopatra to worship him."
(They kiss.)
4. "Immense beings with 100 tentacles would have difficulty with the turbolift."

Answer: Captain Kirk

This is in the episode "By any other name" in season two, in which a group of Kelvans take over the Enterprise to make an intergalactic trip back to their home planet. And fail. Obviously. This quote comes about when Kirk, Spock and McCoy are being held hostage in a cave-like cell on the surface of the planet, trying to make sense of the images Spock saw in the mind of the Kelvan who is guarding the cell door. Putting two and two together, the three of them realise that a) the Kelvans are "immense beings with 100 tentacles", and b) they can't control the Enterprise in their own form (see quote for reasons).

They have to take on human form and it is this new-found humanity that leads to their downfall at the end of the episode.
5. "Captain, a starship also runs on loyalty to one man and nothing can replace it or him."

Answer: Spock

This is from the episode "The Ultimate Computer" in series one, in which the Enterprise is fitted with a computer that will essentially replace the Captain. Kirk worries that he is quickly becoming "non essential personnel" (to quote the computer) and that he will soon lose his job to this machine. Spock says this line to him in response to his loss of confidence, further saying that "Computers make excellent and efficient servants, but I have no wish to serve under them." The computer experiment backfires when it turns out the computer has certain flaws that led it to destroy other starships involved in a simulated attack on the Enterprise. To save the Enterprise, Kirk has to convince the computer to destroy itself, and he resumes command.
6. "Mister Spock, the women on your planet are logical. That's the only planet in this galaxy that can make that claim."

Answer: Captain Kirk

This quote is from the episode "Elaan of Troyius" in the third season. Elaan of Elas is a passenger on the Enterprise and being taken to Troyius where she is to marry the king to bring peace between their respective planets. Kirk's instructions are to take her there very slowly to give her tutor time to instruct her in the ways of Troyius.

This is not a wholly successful attempt, and when the tempestuous Elaan stabs her tutor in a fit of rage, Kirk finds himself taking over the task of teaching her manners and common courtesy. Elaan is a reluctant pupil, and Kirk takes the precaution of asking Spock to accompany him to one of their "sessions", as he is fairly certain he will be denied admittance to her quarters.

He is right of course, the guards at the door will not let him through, but Spock neutralizes them with his phaser.

When he expresses surprise at Kirk's foresight and asks him how he guessed she would not let him in, Kirk responds: "Mister Spock, the women on your planet are logical. That's the only planet in this galaxy that can make that claim" and proceeds to enter the cabin.
7. "We must acknowledge once and for all that the purpose of diplomacy is to prolong a crisis."

Answer: Spock

This is from the episode "The Mark of Gideon" in series three. Having been granted permission by the Council of Gideon to beam one person down to the surface of the planet for negotiation reasons, Kirk goes down alone. It becomes clear fairly quickly that he never reaches his destination.

Although he is certain that Gideon know more about this disappearance than they are letting on, Spock has to stay diplomatic in his discussions with the Gideon Council to retrieve Kirk. As they repeatedly fob him off with excuses and accusations, he comes to the conclusion that "the purpose of diplomacy is to prolong a crisis." Spock eventually goes against a direct order from Starfleet NOT to beam down without the Council's approval, and beams himself to the same coordinates as Kirk was sent to, finding the Captain safe and sound on the surface of the planet.
8. "Alexander, where I come from, size, shape or colour makes no difference."

Answer: Captain Kirk

This is from the episode "Plato's Stepchildren" in season three. Kirk, Spock and McCoy are taken prisoner by the powerful Platonians who can control things and people with their minds. They want to keep McCoy with them as their abilities also affect their health.

When Kirk refuses to let them do this, they start to exert pressure by making the Enterprise crew do things they wouldn't normally do, and even manage to infuriate Spock by almost making him harm the Captain. Kirk says this quote to the only Platonian without the power, a dwarf by the name of Alexander, to convince him to help them overpower the Platonians.

It is interesting that this quote comes from the episode containing the famous interracial kiss between Kirk and Uhura.
9. "This Earth custom called spanking, what is it?"

Answer: Elaan

"Elaan of Troyius" again, my apologies, but it is a good one! Kirk and Elaan have a confrontation in her cabin as he tries to continue teaching her and she refuses to learn. She runs off into another room and locks the door, warning him never to touch her again, to which he replies: "if I touch you again, Your Glory, it'll be to administer an ancient Earth custom called a "spanking," a form of punishment administered to spoiled brats." She follows him out again, asking him to teach her how to make people like her, and then starts to cry. Elasian women's tears have the capacity to make a man fall in love with them forever if they touch him, and Kirk lifts a hand to wipe a tear from her face, and consequently falls head over heels in love. She asks him with a smile: "This Earth custom called spanking, what is it?" and he bumblingly responds: "it's... I'll tell you later." and kisses her.
10. "Emotional, isn't she?"

Answer: Spock

This is from the episode "Journey to Babel" in season two, and actually refers to Spock's mother. Spock has just saved his father's life by donating the blood necessary for him to have a crucial heart operation. This was not an easy decision to make, since Spock was in charge of the Enterprise following an attack on Kirk which left the latter momentarily incapacitated. Kirk pretended to be well enough to take command in order to let Spock off the hook and allow him to save his father. Spock's mother Amanda has been caught up helpless in the middle of it all, desperately worried for her husband's health and frustrated that the two men in her life still won't talk to each other. After the operation, when Sarek won't thank his son for saving him since it was a logical thing to do, she cracks and starts mouthing off at the pair of them and expressing her frustration. This is met with total incomprehension by the two men. The dialogue between Spock and his father Sarek goes:
Spock: "Emotional, isn't she?"
Sarek: "She always was"
Spock: "Indeed? Why did you marry her?"
Sarek: "It seemed the logical thing to do."
