Answer: Garlic mayonnaise with olive oil, served with poached salt cod, boiled vegetables, and hard boiled eggs.

Aioli is a typical meal for festivities and sometimes villages brag about the biggest aioli ever made ! The saying goes that you put in one clove per person at the table. And that it is only good if everyone eats it !
2. Pissaladiere, another typical dish from Provence is :

Answer: a type of pizza crust topped with cooked onions, no tomato sauce and anchovies

Pissaladiere is a pizza like crust with onions on it, and garlic depending on where you eat it. If you guessed dandelion greens salad, that is the word 'pissenlit'. Leeks are a diuretic so there is my other detractor. The pissala root comes from the salted fish, or anchovies.
3. What is authentic Bouillabaisse?

Answer: It is a fish soup only to be made with fish found near Marseille

Bouillabaisse is said to be authentic only with fish from Marseille's harbor. Les poissons de roche or rock fish are one of the most famous. The seafood is visible and broth is added to your dish or served on the side.

Bouillabaisse is served with croutons, and rouille on them. Rouille literally means rust.

Calissons from Aix-en-Provence are a honey almond paste type sweet, with a kind of white glaze on them. The biscuit type thing would be a 'croquant', one place known for them is Allauch, not far from Marseille. The word 'calisson' is not to be confused with 'calecon' which means underwear like boxers.

Barbajuans are a small rectangular spinach cheese filled pastry. Very good ! When they bring them out at festivals, they last about two seconds! I once saw a big table full of them at a fourteenth of July celebration near Monaco emptied within minutes.

Answer: they are sheep's feet (aka trotters) and stomachs in a tomato based sauce

1. Pieds et paquets marseillais, are sheep's trotters according to the Larousse Gastronomique. This is the one I have never eaten ! But if you read the English equivalents you would never eat anything !

Answer: it means 'garlic soup' in Provencal.

The other things are true. In Provencal garlic and water have similar sounding names. So even if there is garlic, it is stilled boiled water. This is an example of making something out of nothing much.
10. 'Pastis', the legendary drink of Provence in literature and films. Which of the following is NOT true ?

Answer: it contains absinthe

It certainly doesn't contain absinthe, thank goodness. Though some people drink pastis straight, it is generally diluted when served.
