The picture is my approximation of the Princeton University shield. Woodrow Wilson was a long-time professor and later President of Princeton University.

To be fair, the average person may not have seen any of these gold certificates terribly often at a time when the average yearly wages for a person was often less than $1,000. Nonetheless, in the late 1920s and early 1930s, Ulysses S. Grant appeared on the $50 Gold Certificate, William McKinley on the $500 Gold Certificate, and Grover Cleveland on the $1,000 Gold Certificate. All three of these were considered circulating currency. The $100,000 Gold Certificate of 1934 (which included Woodrow Wilson's portrait) did not enter general circulation, but was instead used for money transfers between branches of the Federal Reserve System.
