Quiz Answer Key and Fun Facts
1. Stracciatella soup is a broth with whipped egg and parmesan, but what does stracciatella icecream contain (apart from its vanilla gelato base)?

Answer: fine pieces of chocolate

Another 'soup-name' for icecream is 'zuppa inglese'. A dessert prepared with layers of sponge cake, custard and chocolate cream. It's typical of Emilia-Romagna.
2. Which of these is NOT a soup?

Answer: zuppa inglese

'Brodo' is a broth and tortellini is belly button pasta, filled with minced veal or pork, served in chicken stock. 'Orzo e fagioli' is a bean soup with barley in it. 'Zuppa pavese' is soup with bread, chicken broth and fresh eggs. 'Zuppa Inglese' is a dessert.
3. Which of these is NOT a type of pasta?

Answer: cannoli

Tortelloni is the large version of tortellini, Venus' belly button shaped pasta. Fettucine is a Roman version of tagliatelle. Cannelloni are large pasta sheets rolled around a filling of minced meat, eggs and spinach, covered with bechamel and baked, but cannoli are a sweet. Long fried crisp pastry tubes, filled with sweet ricotta, often flavoured with candied fruit, pistachios, etc.
4. Which of these is NOT an Italian cheese?

Answer: mortadella

Bra -let there be no misunderstanding - is a sweet and mild cow's cheese from Piemonte. Mozarella is the cheese that ideally should be made from buffalo's milk. It is a soft white cheese, produced in many southern regions. Caciocavallo is a southern type of cheese.

It looks like bulbous bags that have been tied in pairs and then slung over a rod called the cavallo (horse). Mortadella is a salami made with minced pork, kneaded with lard and flavoured with black pepper.
5. What is 'caffe corretto' in Italy?

Answer: with a dash of liqueur added

'Caffe corretto' is usually taken after meals. Very concentrated coffee (just the first drops of the espresso machine!) is called 'caffe ristretto'.
6. What is the common feature of all of these: peperoni or peppers; peperoncini or hot chili; pomodori (tomatoes) and granturco or maize?

Answer: they all were imported from the Americas

A fifth in this list could have been the potato. Italian food is not considered to be hard to digest. As to 'red' maize, the cook must be very bad before a cob of corn begins to blush, I would think.
7. Which of these expressions describes the Italian habit of cleaning your plate with a piece of bread?

Answer: fare la scarpetta

'Fare passegiata' describes the Italian habit of taking an evening stroll in the centre of the city with the purpose of 'fare colpo' to make impression. Fare paura = to frighten.
8. Which of these is NOT a cereal?

Answer: grana padano

Miglio is millet. Grano Turco was a name for corn (maize). Grano Saraceno is buckwheat. Grana Padano is the next best to 'parmigiano' or 'reggiano' cheese.
9. Which of these cheeses is in fact recooked whey rather than real cheese?

Answer: ricotta

Mascarpone is a cream and is required to make tiramisu. Gorgonzola is a blue cheese. Taleggio is a sweet, soft and fatty cheese with a soft rind which traditionally is matured for 40 days in caves, from Lombardia.
10. One of the most remarkable recipes in Italy is the one that's named 'minestrone di Teramo'. There are seven groups of elements required by local traditions. Seven legumes, seven kinds of fresh vegetables, seven meatballs, and seven pig parts. Which of the following group is NOT a requirement?

Answer: seven types of grated cheese

Cannot imagine a dish that would tolerate seven different types of cheese. The virgins are a traditional requirement but should nowadays probably be considered a folkloristic detail.
