To make kulfi, a mixture of evaporated milk, sweetened condensed milk and double cream has sugar added to it and is then boiled which accounts for a part of its density. A cornstarch mixture is added to further thicken the mixture, before it is flavoured with cardamom, saffron, mango or other fruits. It is then frozen in moulds before being served.

Although in England some people have tried renaming the dessert, it has not, as yet, worked and its name remains to stand tall and proud.
