This coulour and texture are achieved by using copious amounts of currants, prunes, raisins, cherries, candid fruit and a touch of browning to the cake recipe.

It is not unusual to have ten times as much fruits than flour in the mixture. Large amount of eggs are also used and to make it an authentic Jamaican Christmas cake, the liquid used in this mixture consists of a blend of rum, red wine, brandy, port and/or sherry.

After baking more of this alcohol blend is poured over to "Wet" the cake to ensure adequate moisture. Christmas is not considered to be complete without a taste of this yummy dessert.
