Quiz Answer Key and Fun Facts
1. Let's start with the tortillas. Which of the following kinds of chips is normally NOT used as a base for nachos?

Answer: Green corn tortilla chips

I am not even sure there is any such kind of tortilla as green corn but I am sure about the other three. Sometimes around the Fourth of July you may even be served red tortilla chips but these are usually made with food coloring.
2. Probably my favorite topping for nachos is made from avocados. After carefully cutting in half and removing the pit, the fleshy innards are put into a bowl and mashed up along with several other ingredients. What is this creamy nacho topping called?

Answer: Guacamole

Other ingredients may include cilantro, tomato, onion, lime juice, salt and garlic.
3. This red fruit is sometimes used as a topping. It is usually small-diced and added on top especially if the nachos also have shredded lettuce. What 'fruit' am I adding to this appetizer?

Answer: Tomato

Culinary folks consider tomatoes a vegetable but botanically it is actually a fruit. I love tomatoes on my nachos but only if they are ripe and in season. Many restaurants use salsa instead of tomatoes. Some even use both!
4. This nacho topping is made with ground beef, tomatoes, onion, chili powder, celery and many other ingredients. Sometimes it is made with kidney beans; sometimes without. What nachos topping would this be?

Answer: Chili

Sometimes referred to as chili con carne it can be made with turkey, venison, chicken but mostly it is made with ground beef. I consider myself a nacho purist so I don't especially care for chili on my nachos but if I do get it I definitely prefer it without the kidney beans.
5. The different colors of this vegetable are: yellow, white, red and green. On nachos this item is almost always finely chopped. Which topping do you think I am talking about?

Answer: Onion

I absolutely love the green onions also known as scallions. Chop up both the green and white parts then throw them on top of the nachos. Yum!
6. The cheese is the second most important ingredient after the chips have been laid out. What kind of cheese would you NOT expect to find on restaurant nachos?

Answer: Gorgonzola

The difference between Colby and Cheddar is the Colby has a softer texture and slightly milder taste mainly because it does not go through the cheddaring process. Monterrey Jack is similar to Colby but does not have annatto which gives the Colby it's orange color and a sweeter taste.

I love it when the nachos have three or more kinds of cheese and it is melted just right and still warm.
7. This dairy topping is often ordered with your baked potato. It is white and a little dollop will do ya. What nacho topping would you think this is?

Answer: Sour cream

Sour cream is also known as cultured cream and is made by blending cream with lactic acid bacteria. The cream is made using milk and spinning it in a centrifugal separator.

If I get nachos with guacamole then I automatically have to get sour cream as well.
8. These beans are a staple of Mexican cuisine. Every single time my mother served tacos for dinner these beans were also part of the meal. What do you think they are?

Answer: Refried beans

Some places serve their nachos with refried beans although this is not universal. Some restaurants offer black beans and even some spicier varieties of bean. Refried beans are made using dry pinto beans, water, onion, salt and olive oil. Bacon fat or lard can also be used in place of the olive oil.
9. This nacho topping is also one of my favorites. It consists of tomato, cilantro, onion, serrano peppers, salt and lime juice. What is it called?

Answer: Pico de gallo

All the ingredients are finely chopped and either placed in a bowl for tortilla dipping or placed on top of your plate of nachos.
10. This green vegetable will add a little heat to your order of nachos. They can be found cut into rings or finely chopped and with or without their seeds. What topping do you think it could be?

Answer: Jalapeno peppers

Jalapenos change color as they continue to ripen - red, orange and yellow. They also become hotter as they ripen; red jalapenos are slightly hotter than the green.

I like a few jalapenos on mine but they have to be pickled. I cannot take the
heat of raw pepper slices.
