Answer: Supreme

The correct answer is a chicken supreme, try asking for them the next time you visit the butcher. Some say that leaving the bone at the front of the breast helps with cooking, but I have not found that in my experience. At a dinner party it will impress your guests. The others answers are simply similar names to confuse the unwary.
2. Name the two fish from which we primarily harvest red and black caviar.

Answer: Salmon and sturgeon

With the main area of supply being the Caspian Sea, the sturgeon and salmon supply black and red caviar respectively. Normally eaten in Russia with blini (pancakes) it can be a delicious canape or snack. There are various grades of black caviar, the best of which translates as 'slightly salted'.The blini we see in our (UK) supermarkets are nothing like the genuine article, real ones are larger and thinner, just like our own Shrove Tuesday pancakes.

The sea trout and bass are not used as a source of caviar.

Answer: Lancashire hot-pot

Yorkshire Parkin is a either a rich bread or a light fruit cake, depending on your point of view. Yorkshire Pudding is a traditional addition to roast beef, being a flour and egg batter cooked in a very hot oven.
Lancashire Rag Pie is a rather awful pie (or pastie) made from cheap beef and suet. Lncashire Hot Pot is an old Lancashire dish, which tradition tells that the wife of the house would 'make up' then take to the local baker in the morning after he had finished baking. That would allow him to slow cook the meal through the day until the family dined during the early evening.

Answer: a ceramic shallow dish with a cone shaped lid.

A Tagine is a round ceramic dish with a cone shaped lid, sometimes having a third part which is a lower tray to hold charcoal. Used in North Africa to cook a range of dishes, lamb, chicken and fish are common ingredients with the addition of vegetables and spices.
A tangerine is a citrus fruit similar to a satsuma. The chicken and tomato dish mentioned would probably be cooked in a tagine. The goat was a figment of my imagination.
5. Which country is the home of Falukorv sausage?

Answer: Sweden

Falukorv translated into English means 'sausage from Falun', a city in Sweden. Believed to have been taken to Sweden by German copper mine workers. This sausage was revitalised in the late 19th century by butcher Anders Olsson, which led to the development of the modern Falukorv, which uses a mixture of pork and beef or veal. Falukorv, sometimes simply called Falun, is today one of the most popular dishes in Sweden.
6. Which poisonous (but non-lethal) fish is traditionally found in Bouillabaisse, a fish stew from the French town Marseille?

Answer: Weever

The weever fish has poisonous spines on the first dorsal fin and gills. The lesser weever has a habit of lying just under the sand in shallow water, and many bathers have been stung by them (non-fatal). The monkfish and conger eel may also be used in a Bouillabaisse, but the clown wrasse is found far from Marseille in the Red Sea.
7. What could be an alternative name for the dish ajvar (or ayvar)?

Answer: Serbian salsa

Ajvar is sometimes called Serbian salad. Ingredients are (with small local variations) sweet red peppers, eggplant (aubergine), garlic and chili, with an oil for lubrication. The other answers are again my imagination.
8. What type of food is John Montagu credited with inventing in 1765?

Answer: Sandwich

John Montague, 4th Earl of Sandwich is credited with inventing what we now call the sandwich. It is claimed that he invented this meal so he didn't have to leave the gambling table, but contemporary accounts state that he may have invented it to avoid leaving his desk as he was known to be an extremely busy individual. The inventors of the other three wrong answers are to my knowledge lost in the mists of time.
9. What are Japanese Soba and Udon?

Answer: Noodles

Soba and Udon are both types of noodle. Udon noodles are traditional Japanese noodles prepared of wheat flour. Udon noodles are thicker than Soba noodles. Soba noodles can also be served hot or cold with delicious toppings.
10. What are the main ingredients of Welsh Rarebit?

Answer: Cheese, butter and bread.

Welsh rarebit is made by melting cheese and butter in a saucepan, then pouring the molten mixture over toasted bread, variations include the addition of flour, mustard, ale and herbs. Originating in Wales, it is sometimes a supper or lunch snack, but with the addition of cooked vegetable may be given as a dinner. There is no meat content in Welsh Rarebit.
