One of my favorite parts of this movie. Captain Jack Sparrow and Elizabeth Swann are marooned on an island and Elizabeth tricks Jack by getting him drunk on the rum from the cache on the first night. For this quote, Captain Jack Sparrow is mimicking Elizabeth Swann's concern the night before and reacting to her trickery in burning all of the rum in order to signal the royal navy.
