It is the use of the peel that gives marmalade its somewhat bitter taste and distinguishes it from jam.

Once the spices are added and ground the wet paste is sauteed in vegetable oil. Sugar, flavorings and vinegar are added.

Strawberry jam is a type of fruit preserve. It contains both the flesh and the juice of the strawberry. It is a very tasty spread on bread or crackers. It is also used in tarts.
