Quiz Answer Key and Fun Facts
1. To get our family breakfast off to a good start, Mommy or Daddy pours a sweet drink into a small glass. It is squeezed from a fruit. It could be any fruit, but what is it most likely to be?

Answer: orange

Sometimes my parents will squeeze juice fresh from the oranges, and sometimes they will buy it from the store in a carton. I like it either way. Orange juice became really popular in the USA after the University of Florida developed frozen concentrated orange juice in the 1940s, and it was no longer necessary to buy fresh oranges every day.

It is a good source of Vitamin C. Sometimes, however, we eat a fresh orange rather than drink juice because the fruit provides fiber.
2. Now Daddy has opened a cardboard carton, and he pulls out some eggs. He cracks them open, and drops the insides into a bowl. He adds a little milk and uses a whisk to mix it up. Then he pours it onto a frying pan. What kind of eggs is he making?

Answer: scrambled

It's a simple recipe for making scrambled eggs. My big sister likes them boiled, however, so he puts her eggs in a small pot, brings the water to a boil, and then sets them aside to steep for 25 minutes. That cooks the egg but keeps the yolk from turning green. Most eggs that people eat come from chickens, but it is possible to buy eggs laid by other birds.

It doesn't matter if the eggs are brown or white; they are just as nutritious.
3. To make the eggs tastier and even more healthy, sometimes Daddy will chop up vegetables and other plant foods and mix them with the eggs before pouring it onto the frying pan. Which of these is not a plant food that daddy would use?

Answer: ham

Sometimes Daddy will add mushrooms, which are actually not a vegetable but fungus, but most people will call them vegetables when they are cooking. Or he might add tomatoes or garlic. He could add chopped ham or chicken, but those are meats, not plant foods!
4. To start the day out right, my big sister prefers to have a bowl of oatmeal or porridge and stir fruit into it. Which of these is a not a fruit?

Answer: carrot

She will slice strawberries and bananas, and add whole blueberries, and stir it all with her oatmeal. People have eaten oatmeal or porridge for thousands of years. Scientists have found that oatmeal has lots of vitamins and fiber which is good for "cleaning out your system".

It also reduces the amount of a kind of fat in the blood called cholesterol, which can lead to heart attacks and other health problems.
5. My big sister also likes to make her oatmeal or porridge with milk, but she cannot use cows' milk because milk from animals makes her ill. So to start the day out right, she uses other kinds of milk. Which of these should she NOT use because it also comes from an animal?

Answer: goat

My big sister has an allergy to milk proteins. She has tried soy, rice, and almond milk, and also coconut milk, which is very rich. Some people who cannot drink cows' milk can drink goats' milk, but not my sister. She cannot drink goats' milk or sheeps' milk, because like cows' milk they also contain proteins that make her cough and make her stomach hurt, and sometimes give her hives.

This is because she has a true allergy, while some people just have trouble digesting milk.
6. Now Mommy is mixing flour, milk, eggs, and other ingredients in a bowl, and pour it onto a griddle. She makes a stack of these and we eat them with maple syrup. What are they?

Answer: pancakes

She might add blueberries, strawberries, or any kind of fruit to the batter to make really tasty pancakes. Sometimes, she will pour the batter into a mold to make shapes like stars or hearts. We usually pour maple syrup on them when we eat them. Sometimes she will make them out of potatoes, too, the way it is often done in Poland, Germany, and other European countries.
7. Sometimes for breakfast, we keep it simple. I just open the cabinet and pull out a box of cereal, and pour it into a bowl, and add milk. To start my day right, however, Mommy makes sure that the cereal I eat does not have a lot of what ingredient added to lots of American cereals?

Answer: sugar

Mommy doesn't mind the fiber, vitamins, and minerals added to enrich breakfast cereals, but she doesn't want me eating all the sugar. Too much sugar makes children restless, and it adds a lot of empty calories which can make kids fat. It could also lead to diabetes, a very serious disease. So Mommy tries to buy cereals like toasted oat rings (such as Cheerios brand), bran flakes, shredded wheat squares, and other simple cereals. To make it a little tastier we add fruit like bananas or raisins, just like we do to oatmeal or porridge.
8. Mommy is now dipping day-old bread into a mixture of egg and milk. Then she puts the bread on the griddle and cooks it on both sides. She sprinkles brown sugar and cinnamon on top before serving it to us. She's made a kind of toast that we have named after a country. What kind is that?

Answer: French toast

We call it French toast in the USA, but other places call it eggy toast or gypsy toast. In Germany and Sweden, they call it Poor Knights. In France they call it "Lost Bread" and eat it for dessert rather than for breakfast. It's called "Lost Bread" because the recipe works best with bread that is slightly stale, so it helps save money since Mommy and Daddy don't have to throw out the old bread! Some people like to put fruit, butter, or cream on top of their French toast, but often in the USA people just lightly sprinkle cinnamon and sugar, especially for breakfast. (Some people use maple syrup, too, just like on pancakes.)
9. When my aunt comes to visit us from Alabama she makes a breakfast dish that they eat in the southern USA. It's made from ground corn. What is it called?

Answer: grits

In other parts of the world, they might call this maize porridge or polenta, although it isn't quite the same. It is very popular in Southern US states like Georgia, Alabama. But you don't have to travel very far north or west, say to Kentucky, to have trouble finding it. Grits could be yellow or white, depending on the color of the corn (maize). American Indians invented this food long ago by grinding corn with stone.

Hash browns come from chopped up potatoes that were cooked the day before. It's another way to start the day off right and save money, too, by using food that your mommy and daddy might otherwise have to throw out.
10. Grandfather pulled some toast from the toaster. He wants to put a spread on it, but he has to watch how much fat he eats because of his heart condition. To start his day off right, what would be the best thing to put on his toast? (What has the LEAST amount of fat?)

Answer: jam

Butter, cream cheese, and peanut butter all have a lot of fat. So people who have to watch how much fat they eat have to be careful about those spreads. Jam is made from fruit, like strawberry jam, and doesn't have any fat at all, but can contain a lot of sugar.

In some countries, like Australia or Great Britain, people use Marmite or Vegemite, which is made from yeast. It would be a low-fat choice, too, and also has lots of B vitamins.
