The first knives were originally made crudely of wood, bone or flint and were used both as weapons and for domestic purposes. Professional kitchen knife using steel and later stainless steel production started in the late 1700s and gradually knives for particular uses were developed.

A filleting knife is used to remove the skin from fish or sinew from meat. Because of its tapering shape and very thin point, it is also useful in slicing fish or meat into very thin slices in preparation for stir-fry or tartare.
A steel is a long thin device that is used for honing the sharp edge a knife that becomes dull with use. The other incorrect answers are gardening or woodworking tools.
