Plethobasus cyphyus goes by the name of bullhead. It is an endangered fresh water mussel and is endemic to the USA. It belongs to the family Unionidae commonly known as river mussels. As far as our clue is concerned, bull is bovine and in Cockney rhyming slang, head is crust of bread.
