The Cockney alphabet has several different versions. This is the one I knew:

D for Dumb (or D fer Ential - Deaf or dumb or Differential)
E for Brick ('eave a brick or Heave a brick without the dropped aitch)
F for Lump (Heffalump - an A A Milne elephant)
G for Police (Chief of Police)
H for Consent (Age for consent)
I for Novello (or I for the Engine - Ivor Novello or Ivor the Engine)
J for Oranges (Jaffa oranges)
K for Restaurant (Cafe (pronounced caife) or restaurant)
L for Leather (Hell for leather)
M for sis (Emphasis)
N for Lope (Envelope)
O for the Wings of a Dove (Famous song for boy sopranos)
P for Relief (No comment)
Q for the Loos (Queue for the loos)

V for Espana (Viva Espan)
W for a Quid (Double you for a quid (Pound sterling)
X for Breakfast (Eggs for breakfast)
Y for Mistress (Wife or mistress)
Z for Wind (Zephyr Wind)

I do not offer this as a definitive list - there are many out there!
2. The symbol called an asperand is this word.

Answer: at

Also known as 'commercial at' in English, many countries have imaginative names for this symbol @. In Israel the @ symbol it is known as 'strudel', in Dutch as 'apestaart', which means 'monkey's tail', in Swedish, as 'snabel-a' ('a' with an elephant's trunk), or 'kanelbulle', for a Swedish Chelsea bun.

In German it is called 'Klammerraffe' which means 'clinging monkey', in Greek 'little duck and in Russian 'sabachka', meaning 'puppy'. In Brazil and Spain the symbol is known as 'arroba', which is an old weight measure of 15 kilos and in Italian as a 'chiocciolina', which means 'little snail', which it is also called in France as 'petit escargot', in Finland as a mouse's tail and in Hungary, as 'kukatsz', which means 'little worm'.

The Norwegians call it 'kroellalfa', meaning 'curled a' and in Czech it is called 'zavinac' which means a rolled pickled herring. I am indebted to correspondents of 'The Guardian' newspapers for this information.
3. Add a letter and anagram to make a Jolly Jack.

Answer: Tar

A Jolly Jack Tar comes from the 18th and 19th centuries, when sailors of the British Royal Navy had their hair and pigtails impregnated with tar, which no doubt looked smart but must have smelt horrible.
4. Add a letter to get a heavenly body, the closest to us being about 92 million miles away.

The closest star to earth is, of course, our sun.
5. Add a letter to get the place where, according to the rhyme, you met a man who wasn't there.

6. Add a letter to get what 'Goodnight-Loving', 'Chisholm' and Santa Fe' are in the US.

Answer: Trails

The Goodnight-Loving Trail ran from Texas to Colorado and I first found out about it in Leslie Thomas' excellent novel 'The Adventures of Goodnight and Loving'. The Chisholm trail was used to drive cattle overland from ranches in Texas to Kansas railheads and the Santa Fe Trail was a historic 19th century trail connecting Missouri and Santa Fe, New Mexico.
7. Add a letter to make a name for small crosswise ropes attached to the shrouds and forming the steps of a rope ladder.

Answer: Ratlins

Ratlines or ratlins are small ropes fastened horizontally to the shrouds (the standing rigging, attached symetrically on port and starboard of a sailing ship, which hold the mast up from side to side) forming a ladder for going aloft.

Answer: Startling

Have you noticed that in the newspapers developments are nearly always 'startling' or 'unexpected'?

A rattling good yarn is considered to be an excellent story.
