Answer: Celery

The way to prepare mirepoix is to dice all the veggies finely and sweat them in butter or fat for long time without browning them. They are then added to stews, or stocks for later use in sauces or soups.

Answer: Beetroot

Versions of Borscht are found in many of the Eastern European cuisines, and even Jewish cuisine. It's usually served with a dollop of sour cream or yoghurt.

A few slices of radish is very nice included in a salad. Recently it has become popular to serve radishes pickled for a few minutes in vinegar, salt and sugar as an accompaniment to fatty foods. The heirloom colours of carrots include some that are purple or white, and some that have a less elongated growth and are called 'ball' or 'horn' carrots. The growing of some of these earlier varieties has become popular over recent years.
