1. What is the Tibetan flour made from ground roasted barley?

Answer: Tsampa

This has been described as the most Tibetan of all dishes. Mixed with butter tea, dried yak cheese and sugar it is made into a dough called "pa". This is still a common meal in central Tibet and travellers carry the ingredients to mix up a batch of pa on the road.

Answer: Brioche

Brioche is a sweet bread containing sugar and eggs that developed over the centuries in France, possibly from the "blessed bread" of the Church. The name seems to come from the old Norman word "brie" for a wooden roller.

Answer: Sourdough

Sourdough bread does not require the addition of yeast (beyond the natural yeast present in the sourdough itself). It is started by fermented flour and water. It is known for a crispy crust and its chewiness.

The top stone is called the handstone and the lower the quernstone. Since the Neolithic period this simple technology has been used to grind flour. The best quern stones are made of a hard rough stone like basalt. The oldest known such stone dates to about 9000 BC but simple grinding technology like this was used right up to the industrial age.

Answer: The flour in the air exploded

May 2, 1878, one of the world's largest flour mills (in Minneapolis) blew up when a spark set the flour dust in the air on fire. Eighteen workers died. This disaster led to reforms and better ventilation in mills.

Answer: Fed five thousand people at the Sea of Tiberias

The recipe for that bread would be worth having! This event was said to have happened at Bethsaida. It is described in several of the gospels.

Answer: Naan

There is a lot of similarity between the Spanish/Greek Pita bread and the Indian Naan bread but Naan is cooked in a tandoor and sometimes has yoghurt added to the recipe. They are both delicious for mopping up the right sauce.

Answer: Swedish crispbread

Swedish crispbread used to be baked just twice a year - after the harvest and in the spring. While once it was considered to be food for the poor, like oysters, it is now considered a more sophisticated choice particularly for the diet conscious.
