2. If you were playing a four-person table game with 144 tiles (like dominoes) with Asian symbols and characters on them, trying to match them up, what game would you most likely be playing?

Answer: Mahjong

The game of Mahjong evolved sometime during the long Qing Dynasty (1644-1912) in China. It is very much like the card game rummy in that one strives to match sets of tiles. The name "Mahjong" likely derives from an older Chinese word meaning sparrow. The sound of the tiles clacking together resembles the nattering of sparrows. With variations, it spread throughout Asian and, in the 20th century, the United States.

It was banned by the Communist government during the Cultural Revolution in China (1966-1976). Sets of tiles were first sold by Abercrombie & Fitch in the US in 1920. Eddie Cantor recorded the popular song "Ma Is Playing Mah Jong" in 1924.

The National Mah Jongg League was founded in 1937 as an association of Jewish American women.

The secular American Mah-Jongg Association was founded in 1999.

4. Landscapers were at my newly built house and planted a conifer. Which of these might they have planted?

Answer: Spruce

Spruce is a variety of coniferous tree that people frequently use as a Christmas tree. The sap of maple trees is used to make maple syrup. The acorns from oak trees were traded by Native-Americans.

5. What color is Himalayan salt?

Answer: pink

The mineral impurities in it give this salt a pinkish hue. The salt has been used not only as a trendy table salt, but also in spa treatments. Marketing strategies have made unfounded claims at this point about its health benefits. I enjoyed this joke by comedian Jeff Dunham about the salt: "The Himalayan salt we just got says it was created 250 million years ago. Label says the expiration date is 2016. Guess they dug it up just in time!"

6. Chef Tilly goes over the top while beating cream to make whipped cream. What happens when she beats the cream too hard for too long?

Answer: she makes butter

The cream used to make whipped cream has a very high butter fat content. When beaten, the fat globules form a structure in which air is trapped. When overbeaten, the fat globules come out of solution, stick together, and form butter. A butter churn is essentially a device for overbeating cream. Butter is a semi-solid emulsion which contains around 80% butterfat.

7. What Levantine and Egyptian dish is made primarily with chickpeas, tahini, olive oil, and lemon juice?

Answer: Hummus

If you use dried chickpeas rather than canned to make hummus, be sure to soak them overnight in a solution of 1 Tbsp. baking soda (to prevent gas and bloating) and then cook over low heat. So easy to make, just blend the ingredients, and you're done! Make it a day ahead of time, and let stand in the fridge. Chock full of essential fatty acids and a little plant protein, it's a great alternative to junk-food snacks! Baba ganoush is similar, except that it substitutes eggplant for chickpeas.

8. Of the four traditional ingredients in beer, which one makes up the highest percentage of the total volume?

Answer: water

The traditional German beer purity law of 1519 that is the basis of most of the world's beer production, actually only listed three of these four components: Water, barley malt and hops. Yeast was (and still is) omnipresent in the atmosphere and the vats in which the beer fermented were not sealed, so fermentation began within a few days of brewing. Brewers interested in a more consistent quality, however, transferred yeast from one vat to the next in order to get a more controllable fermentation process and timing.

10. Some video poker machines actually theoretically give the player a slight edge. Yet these same machines are among casinos' biggest income producers. How is this possible?

Answer: Most gamblers do not play properly

Casinos rely heavily on what they call "the idiot factor" to ensure their profits. Most gamblers do not use what is called optimal strategy when playing video poker and other gambling games. The mathematics of video poker is very complex, and is sometimes counter-intuitive. Poor play by gamblers is one way that casinos make money. Even experienced players often make costly mistakes.
