Answer: Kennebec

INO fries are peeled and diced daily from fresh Kennebec variety potatoes. Kennebecs have a smooth white skin, shallow eyes, and are known as one of the finest baking potatoes. They yield with the best of them, reaching maturity midseason (approx. 80 days).

Produce is delivered to each location every other day. Lettuce is hand-leafed, meat selected and ground by INO butchers, buns baked fresh, and shakes made from real ice-cream. INO does not use freezers, heat lamps, or microwaves at any of its locations.

Tiny Biblical notations are placed in out-of-the-way spots (the undersides of cups and near the seams of the paper burger pouches). The verses have been printed in this way since at least 1987. According to a New York Times article, an In-N-Out spokesman said the citations are printed in memory of Rich Snyder (CEO 1976 - 1993), a son of the founders, whose initiative led to their first being used.

He died in a private plane crash in 1993 in Orange County at the age of 41 along with several other company board members.

The following Scripture references are found on INO material sans text: REVELATION 3:20 (burger and cheeseburger wrappers): Behold, I stand at the door, and knock: if any man hear my voice, and open the door, I will come in to him, and will sup with him, and he with me. NAHUM 1:7 (Double-Double wrapper): The LORD is good, a stronghold in the day of trouble; he knows those who take refuge in him. JOHN 14:6 (water cups): Jesus saith unto him, I am the way, the truth, and the life: no man cometh unto the Father, but by me.

Incidentally, INO no longer offers the blue 140z. water cups.

"Secret Menu" items are those not included on the regular INO menu. These are popular made-to-order items that any INO location will recognize. 'On the Sal' is just lettuce and dressing. Nothing else. 'Flying Dutchman' is two beef patties, and two slices of cheese. Nothing else. 'Garden Style' is not an INO (secret or otherwise) menu item. NOTE: by name I refer to a verbal order which INO associates could translate into the corresponding techincal terms.

Guy was known by his friends in the "Over the Hill Gang" (his racing team) as "Dutch". He was also fond of Harleys. Hot air ballooning was a favorite of Guy's brother Rich. Guy took over as CEO of INO when Rich died in the plane crash in 1993. Guy died in 1999, at which point, his mother Esther took over.

"Secret Menu" items include 'Fries Well Done' and 'Fries Light'. The former is cooked for an extra minute or two for an extra crsipy experience, while the latter is cooked for only 3 minutes.
10. Which of the following is not recognized as a "Secret Menu" order by In-N-Out?

Answer: Old Fashioned Style

'Old Fashioned Style' was thought to mean replacing INO special sauce with ketchup and mustard. INO does not recognize this term. 'Neopolitan Shake' is a blend of chocolate, vanilla and strawberry shakes. As an aside, 'Choco-Vanilla Swirl Shake' is not an official secret menu item, but INO will make it and any other combination of the available flavors if asked for. 'On the Sal' (technically 'Veggie SL Protein Style' or 'Veggie >S only Protein) is just lettuce and dressing. Nothing else. 'Flying Dutchman' is two beef patties, and two slices of cheese. Nothing else. NOTE: by 'recognize' I mean that were these orders placed (verbally), INO associates could translate the request into the (techincal) order it refers to. I do not mean to imply that these are techincal terms. Furthermore, I use "Secret Menu" in a broader sense to encompass all orders so recognized that do not appear on the in-store menu.
