The best strategy is to use Din's Fire on him, but eventually your magic will run out. When this happens, it's best to just loop around him (do not Z-target him) and hit him with horizontal slices, but still this can prove difficult.

You face the Iron Knuckles in the Spirit Temple, but you also face one more pair in Ganon's Tower. The Iron Knuckles are one of the most powerful enemies in the game. With one swipe of their mighty axe, they could take off 3 or 4 hearts to your health.

The best strategy (and pretty much only) is to get behind them and swipe once (and hopefully twice) before he swings his axe in that direction. When this happens, roll out of the way and repeat. When his armor falls, you could be cheap and kill him with bombs, but I like to finish it the right way.

He could be a bigger threat though because he can run now. Simply dodge his attacks and cut him up when you get a chance.

This can be a trick question, depending on how you looked at it. You can fight Ganon with anything you want, but you HAVE to kill him with the Master Sword. I always used the Biggoron Sword to battle with him, but when Zelda uses her magic on him you have to use the Master Sword to activate the ending cutscene. So no, you cannot use just any sword.
