When I see the word "brat," my hungry self thinks of a juicy bratwurst sizzling on the grill during a warm summer day. Let's take a look at twelve different forms of barbecue around the world. (Click the images for a closer look!)
Japanese yakitori consists of small pieces of chicken threaded onto skewers and grilled over charcoal. The heat gives the meat a smoky flavor, and cooks season it either with salt or with tare, a sweet soy-based glaze that caramelizes as it cooks. It does not stop at standard cuts. Skin, liver, and heart all appear on skewers in many places. Yakitori is common in casual settings, especially at izakayas, where it is served alongside rice, miso soup, or small side dishes of edamame and pickled vegetables.
2. Texas BBQ
Texas BBQ centers on slow-smoked meat, especially beef brisket and ribs. The seasoning stays minimal, usually just salt and pepper, before the meat goes into a smoker for hours over woods like oak or mesquite. The long cooking time softens the meat and creates a dark, crusted exterior.
It is typically served with sides such as coleslaw, potato salad, baked beans, and cornbread. Pickles, sliced onions, and white bread come on the side, and people either eat them between bites or stack them with the meat to make a simple sandwich.
3. carne asada
Carne asada from Mexico centers on beef, usually flank or skirt steak, marinated with lime juice, garlic, and spices before it goes over an open flame. The marinade adds acidity and flavor, and the quick grilling keeps the meat from toughening. It is often served with tortillas, guacamole, salsa, and grilled vegetables, with rice and beans as common sides.
The meat can also be eaten on its own or used as a filling for tacos.
4. mechoui
Moroccan mechoui involves roasting lamb slowly, often as a whole animal or in large sections. The meat cooks over an open fire or in a special oven, and spices such as cumin, coriander, and paprika are rubbed into the surface beforehand. The result is tender meat with a seasoned exterior.
It is prepared for larger gatherings, including weddings and festivals. Couscous, flatbread, salads like zaalouk, and soups such as harira typically accompany it.
5. bulgogi
Bulgogi from Korea consists of thin slices of beef marinated in a mixture of soy sauce, sugar, garlic, and sesame oil. The marinade gives the meat a sweet and savory flavor and keeps it tender. Traditionally, cooks grill it over an open flame, though it also works in a pan.
At the table, it is served with rice and a range of side dishes, including kimchi and pickled vegetables. Diners often wrap pieces in lettuce with garlic or chili paste.
6. barbie
In Australia, a "barbie" refers to a casual barbecue that doubles as a social event. People grill sausages, steaks, lamb chops, and seafood over an open flame. These gatherings happen at homes, parks, or beaches, especially on weekends or public holidays. A barbie can include salads, bread rolls, grilled vegetables, and drinks.
7. souvlaki
Greek souvlaki consists of small pieces of meat threaded onto skewers and grilled. The meat is marinated in olive oil, lemon juice, garlic, and herbs before it is grilled. It is commonly served in pita bread with tomatoes, onions, and tzatziki. It is commonly eaten as street food and also served as a full meal with sides such as fries, rice, or Greek salad.
8. churrasco
Churrasco, a Brazilian style of barbecue, features large cuts of meat cooked over an open flame. The seasoning stays minimal, often just rock salt, which draws out the natural flavor. The meat cooks on long skewers and is sliced directly onto plates in churrascarias. Full meals include rice, black beans, farofa, salads, and fried plantains.
9. satay
Indonesian satay features small pieces of meat, such as chicken or beef, marinated with spices like turmeric, coriander, and cumin, then skewered and grilled over an open flame. It is usually served with peanut sauce. Rice cakes, cucumber slices, and pickled vegetables are common accompaniments.
10. braai
A braai in South Africa combines cooking and social gathering in one setting. Meat such as beef, lamb, chicken, and boerewors sausage cooks over wood or charcoal. People often stand around the grill while the food cooks. Typical sides include pap, potato salad, coleslaw, and grilled sandwiches known as braaibroodjies.
11. char siu
Char siu, a Cantonese dish, features pork marinated in a mixture that includes hoisin sauce, soy sauce, honey, and five-spice powder. The meat roasts until it becomes tender and develops a glossy, reddish-brown surface. It is served with rice or added to noodle dishes, and it also appears as a filling in buns known as char siu bao.
12. doner kebab
Doner kebab, from Turkey, features meat stacked on a vertical rotisserie, where the outer layer cooks as it turns in front of the heat. Cooks then shave off thin slices as it turns. The meat, often lamb, beef, or chicken, is seasoned before cooking. It can be served in flatbread, as a sandwich, or on a plate with rice or fries. Fresh vegetables and sauces such as yogurt, garlic, or chili are added.
