Manzanillas are originally Spanish olives, and are also grown in California. They are generally small-to-medium in size. Manzanilla olives are the common green olives you find in a jar on the supermarket shelf, often stuffed with pimento.

Kalamatas are large, meaty Greek black olives. They are typically eaten on their own (perhaps as part of an appetizer platter) rather than chopped and added to other dishes.

Luganos are classified as Italian olives, but they actually originate in Switzerland. These olives are large and very black when ripe, and are typically quite salty. A fine olive oil, sold only in Lugano, Switzerland, is made from them.
