Quiz Answer Key and Fun Facts
1. Nestle's Quik was the brand name of a product I grew up with, though it has been known as Nesquik in Europe from the 1950s (and worldwide since 1999). What was this Quik that I remember?

Answer: Powdered drink mix

The classic flavour of Quik was chocolate, though other flavours did exist. Strawberry was good, banana was just OK - in my opinion. The drink was easy to prepare as all you needed was a glass of milk and a spoon to introduce the powder and stir it thoroughly. It was one way to get a youngster to drink milk!
2. What eggy concoction were we assured that "real men" don't eat, in the title of a 1982 satirical book?

Answer: Quiche

"Real Men Don't Eat Quiche" by Bruce Feirstein is one of a series of books in which the author takes a humourous look at both male and female stereotypes. Whether or not "real" men eat the savoury pie known as quiche makes no difference to the fact that this is a very tasty foodstuff. Eggs are always involved, and cheese often is an ingredient.

Other favourite ingredients are onions, ham (or bacon), tomatoes or possibly seafood.
3. What should I have done with the quince I was given by my neighbour?

Answer: Made jam or jelly

Quince is a fruit that grows on a tree and is somewhat like an apple or a pear. When grated, combined with lemon zest and boiled, the result is a very tasty jam-like substance. I first encountered quince jam when living in England, and often wonder if it can be found in Canada too.
4. What "q" name is given to the dairy product sometimes known as "curd cheese", and usually made without the use of rennet?

Answer: Quark

The name quark is derived from the German language, and quark is present in the cuisines of most German speaking countries. It is similar to cottage cheese, but generally considered to be a different product. It also resembles Spain's "queso fresco" and France's "fromage blanc" in texture and flavour. It is made by warming sour milk until it curdles and then straining the result.
5. Where did the quesadilla originate?

Answer: Mexico

The original Mexican quesadilla was made with either a corn or flour (wheat) tortilla, filled with cheese and possibly meat or beans and then grilled. Over the years it has become a favourite dish in the southern USA as well, and many variations have developed with fillings as diverse as goat cheese and chocolate (though hopefully not together)!
6. What term can refer to a dumpling of creamed fish or meat, or to other food in the shape of that dumpling?

Answer: Quenelle

These dumplings are oval in shape, almost like a slightly squashed egg. The term originally applied to breaded and poached fish or meat dumplings, served as an appetizer or side dish in French cuisine. Over time these quenelles became something that could also be served as a main course.

The term itself began to be applied to any food served in that oval shape including rice, ice cream or mashed potatoes. A utensil called a quenelle spoon exists to aid in this preparation.
7. For what reason was quinine originally added to tonic water?

Answer: As a guard against malaria

Derived from the bark of a South American tree, quinine was used in the nineteenth century to fight the disease malaria. Putting it in tonic water was a convenient way of delivering the medicine as a prophylactic to soldiers and others serving or living in countries where malaria was prevalent.

The dosage of quinine in today's tonic water is much reduced from those times, though it does account for the drink's bitter taste.
8. Which of the following is derived from a flowering plant, and is described as a "pseudocereal"?

Answer: Quinoa

Quinoa is a food that I heard of for the first time just a few years ago, yet it has been produced in the Andes for thousands of years. It is described as a pseudocereal because it is not a grass. The plant produces a grain that is gluten free and therefore much in demand. The year 2013 was declared the International Year of Quinoa by the United Nations.
9. What must be absent from the recipe to qualify a product as a quick bread?

Answer: Yeast

A quick bread is defined as a bread that uses neither yeast nor eggs as the leavening agent, to make the dough rise. Eggs are often present, but not for that purpose. Instead baking powder or baking soda, or some other chemical leavening agent can be used. Quick breads include banana bread, scones, some cakes and soda bread, and as the name suggests, take less time to prepare and cook than do yeast-leavened breads.
10. What exactly is a quahog?

Answer: Clam

The quahog, also known as the hard clam or round clam, is native to eastern North America, from the Canadian maritime provinces to Mexico's Yucatan. Its scientific name is Mercenaria mercenaria, and the name quahog comes from a Narragansett word. The Narragansetts used the shells for wampum, as well as eating the meat of the quahog.
