Quiz Answer Key and Fun Facts
1. One of the special dishes coming from the people of Central Asia is called "Steak Tartare" We begin with- "WHAT'S THAT?" What's Steak Tartare? Basically it is _______

Answer: Raw Ground Beef

You take a patty of raw ground beef and marinate it in wine for a time, then serve it with garnishes, possibly a raw egg yolk or tartar sauce. If you aren't into possible food poisoning, this will probably not be the thing you wish to order. It has been around for a long time, but if you're nervous, I would order from the cooked part of the menu.
2. We have some other ways to serve our beef. India has something, you could broil your piece of steak and serve it with a raita to accent- "WHAT'S THAT?" What's a raita? I would describe it as a _______.

Answer: Yogurt Based Condiment

Raita is a collection of minced vegetables that is mixed in with a yogurt based dressing. It can cut down on the spiciness of what you are serving. It comes from Indian heritage.
3. How about pasta? Let's make a sausage and Rotelle combination. Now Rotelle needs- "WHAT'S THAT?" What's Rotelle? It's a form of pasta that when raw looks like something you could use to _______.

Answer: Fix Your Wagon Wheel

Rotelle is Italian for "Little Wheels", and they do look like tiny wagon wheels. Some American companies even put a picture of a wagon on their package for kids to put the wagon wheels on.
4. We will need something on the side for these dishes, so let's start on making a French Brioche. "WHAT'S THAT?" A brioche is a form of _______.

Answer: Bread

Brioche is a very rich bread with high egg content and butter, so you know you have a high calorie intake when you bite into it. But it is oh so tasty. You could serve it alongside a light main dish, or even as an appetizer.
5. Perhaps with the pork you have brought in we could serve it in aspic. To do that, you- "WHAT'S THAT?" What is aspic? A layman's term for aspic would be _______.

Answer: Meat Jell-o

Aspic is formed from a meat stock, which tends to have a high gelatin content. So when you cool the stock it will become like a translucent gelatin. If you set it up properly, you can add your food to the aspic. Then it will look like a clear Jell-o loaf with whatever you put in it visibly suspended in it.
6. Perhaps your taste buds would go for something Scandinavian? Let's try making some Norwegian Lutefisk. "WHAT'S THAT?" Lutefisk is a traditional dish in Norway, it is _______.

Answer: Dried Cod Prepared in Lye

Lutefisk is created by drying whitefish, likely cod, and then fermenting it in lye. After a lengthy processing, they cook it. It has a gelatinous texture to it when you eat it, and it is an acquired taste.
7. While we are waiting, would you like some Emmental as an appetizer? "WHAT'S THAT?" At first glance you might think it's just _______.

Answer: Swiss Cheese

Emmental is a cheese from Switzerland. It does have the characteristic holes in it that you find in Swiss cheese, but not all Swiss cheese is Emmental. It has a light texture and flavor to it. The holes are created by the bacteria inside of it releasing carbon dioxide forming air pockets in the cheese. Until recently when it became the trademark of the type of cheese from Switzerland, Emmental makers would try hard to avoid the bubbles in the cheese.
8. Anyone for Russian cuisine? I could go for some Kvass right about now, it's getting- "WHAT'S THAT?" Kvass? Oh, you would like it. It's a _______.

Answer: Fermented Bread Beverage

I was about to say it is getting warm in here, so something to drink sounded good. Kvass is a popular drink in Russia that is made by the fermentation of bread, most often rye bread. It can sometimes be flavored with berries or syrup, but can just be partaken as is.

The less processed it comes, the better, according to the Russians. In fact they often serve it with the yeast still in it, which adds to the vitamin content.
9. I think I would like to try a Yakisoba. Could you get me the- "WHAT'S THAT?" What is Yakisoba? I keep answering all these questions and I never have time to make the meal. Literally Yakisoba in Japanese means _______.

Answer: Fried Noodles

Noodles made from wheat flour are stir fried with vegetables and meat, mostly chicken or pork. It can be served on a plate, or for the mobile, it is sometimes served on a long bun and eaten like a hot dog. Just be careful. Noodles on a bun could be difficult to eat.
10. Something for dessert, perhaps from the Emerald Isle? I could go for a slice of Banoffee Pie. "WHAT'S THAT?" Well, in this case it IS pie. But is a glorious tasting version of _______.

Answer: Banana Cream Pie

The term Banoffee, or Banoffi as some spell it, comes from the mashing of the words Banana and Toffee. It is a Banana Cream Pie topped with a light English toffee made from condensed milk. It originated in 1972 in The Hungry Monk Restaurant in East Sussex. People have attempted to steal the recipe to claim as their own, so the creator has since published the recipe, claiming he would rather people eat it the correct way rather than suffer from something inferior.
