Quiz Answer Key and Fun Facts
1. This vegetable tastes a bit like broccoli, a bit like a radish, and is often used in soups. It's German name means 'cabbage-turnip', and it's a subspecies of Brassica oleracea. Which vegetable is this?

Answer: kohlrabi

Kohlrabi originated in northern Europe. The stem produces a green-tinged white or purple globe just above the soil. The young bulbs can be eaten raw, and fresh young leaves can be eaten once blanched and sauteed. The mature leaves are usually used for animal feed, and the mature globe can be mashed, pureed, steamed and buttered, or mixed into other vegetable dishes.
2. Native to Mexico and Central America, which vegetable is also known as the Mexican potato or the Mexican turnip?

Answer: jicama

While most jicamas are sold when they weigh around 1 - 3 pounds, a jicama, which is a member of the legume family, can grow up to 50 pounds. Crunchy, juicy and a bit sweet, jicamas can be eaten raw, added to salads or mixed with fruits. It is also a fairly new addition to Chinese stir-fries, and is an acceptable substitute for water chestnuts.
3. With a taste like a cross between parsley and celery, which vegetable with the Latin name of Apium graveolens rapaceum was first grown in the Mediterranean, and is often combined with potatoes?

Answer: celeriac

Often pickled in Europe, and still relatively underused in the USA, celeriac, also called celery root or celery knob, can be used in stews, mashed, combined with other root vegetables in gratins, or simply cooked with butter and salt.
4. Sometimes called noodle squash, which cylindrical vegetable is a member of the winter squash family, and tastes slightly nutty and sweet?

Answer: spaghetti squash

While its origination is not known for certain, but believed to probably be either North American or Japanese, spaghetti squash can be boiled, baked or microwaved, and served with sauces or butter.
5. Related to both potatoes and nightshade, the Solanum melongena is perfectly at home in ratatouille. By what name is this vegetable better known?

Answer: eggplant

A favored ingredient in Greek moussaka, eggplant can also be battered and fried, stewed, baked, pickled or fried in olive oil. While eaten as a vegetable, botanically, eggplant is actually a berry.
6. With a look, feel and taste that is quite similar to scrambled eggs, which vegetable is part of Jamaica's national dish, has the nickname 'vegetable brains', and is native to West Africa?

Answer: ackee

The national dish of Jamaica is 'ackee and saltfish', although it is also referred to as 'ackee and salt cod'. Ackees grow in clusters on an evergreen tree that grows on the Ivory Coast and the Gold Coast of West Africa. With a red exterior, creamy yellow pulp and black seeds, only the pulp, once fully ripened, is eaten.

The rest of the ackee - as well as the unripened ackee - is toxic. A mild-flavored vegetable, the ackee is used in curries, soups, stews and fish dishes.
7. Dark brown on the outside, creamy white on the inside, which vegetable with the Latin name of Eleocharis dulcis is actually a tuber of an aquatic plant?

Answer: water chestnut

Water chestnuts are eaten both raw and cooked. They have a slightly sweet taste, and a crisp juicy texture that goes well with stir-fried dishes.
8. With the French name of 'pissenlit', this vegetable is sometimes used in salads dressed with warm bacon fat and vinegar. Also used in winemaking, which vegetable has the Latin name of Taraxacum officinale?

Answer: dandelion

A relative of endive, the dandelion is a versatile plant. The leaves can be added to salads, used in herbal applications or cooked in the same manner as spinach. The flowers can be used to make a light-bodied wine as well as a sweet preserve.
9. Native to the eastern mountain regions of North America, which vegetable is a harbinger of spring and is prized for its combination of onion and garlic flavors?

Answer: ramp

A member of the lily family, ramps are also known as wild leeks, wild onions or wild garlic. The ramp grows at elevations of over 3000 feet and can take up to seven years to mature. Used by the settlers both as a food source and as an ingredient in herbal remedies, there are still springtime ramp festivals in the Appalachians.
10. Originating in India and Southeast Asia, this vegetable has dark brown hairy skin, and flesh that can be shades of white to gray, and in some cultivars, pink or purple. Which vegetable has to be cooked before eating and is sometimes known as 'eddo'?

Answer: taro

While taro originated in India and Southeast Asia as early as 5000 B.C., today it is an important crop in China, Japan, Africa, Hawaii, the Caribbean and many tropical countries. Very filling and quite nutritious, taro can be added to soups and stews, as well as being mashed, fried, steamed, boiled or baked.
