Byrne grew up in a religious family and in 1961, at the age of 11, he felt a desire to become a priest. Feeling this would make his family proud, he left Ireland to join a seminary in England. He spent five years there (until almost 16) training to be a Catholic priest. He was expelled in 1966 for getting caught smoking and for hanging with the "wrong crowd". Later, Gabriel was to say in publications that he was abused during his time there but the experience overall would help him in later acting years.
When Byrne returned to Dublin after his failed seminary years, he was still a teenager and took a job on the factory floor of a toy company. He spent his days literally hammering or sewing plastic button eyes into the heads of stuffed teddy bears. He would later call these his "gray years" as he stared into thousands of blank, toy faces all day.
After his years in factories and various odd jobs, Byrne enrolled at the University College Dublin (UCD) in 1968. Here, he began his studies in archaeology and linguistics, specifically Spanish. After graduation, he moved to Spain in order to truly master the language. In 1974, he was living in Bilbao when he famously trained as a bullfighter. He chose not to pursue bullfighting as a full-time career path, but deemed it a great way to engage with the local culture.
In the mid to late 1970s, Byrne was back in Dublin, Ireland. This time he reached back to his archaeological studies. He took a job as a young archaeologist digging through layers of peat and mud at the Wood Quay site in the city. He worked specifically on the Fishamble Street section of the site, which was rich in 10th-century history and he was the first to find a Viking leather child's shoe, in almost perfect condition.
Having completed a Higher Diploma in Education (HDipEd) in 1973, Byrne returned to his roots in the 1970s for his teaching career, working at his own former secondary school, Ardscoil Éanna in Crumlin, Dublin. Here he taught Spanish and history to the students. He also started an after-school drama class for his students. He noticed that the kids appeared more free and open during drama sessions than they did in their daily lives, which made him realize he wanted to pursue acting himself.
In his late 20s, Byrne embarked on an acting career that would be a part of his life from that point forward. He started on the stage, acting first in local Dublin theaters then in Ireland's national theater. His first major television role was playing the character Pat Barry in a long-running Irish soap opera. In 1981, he had his first breakout film role in the movie "Excalibur". As of the end of 2025, he had over 110 total acting credits in his career.
Byrne transitioned into his role as a producer in the early 1990s, focusing on projects with strong Irish roots or compelling psychological themes. He eventually formed his own production company called Plurabelle Films. He originally acquired the film rights to Gerry Conlon's autobiography, "Proved Innocent" in 1993 and became the executive producer of the film version called "In the Name of the Father", which earned several Academy Award nominations.
By 1996, Byrne expanded his creative output beyond acting and producing to include screenwriting and play writing. Again, he focused on personal stories and ties to Irish roots. Critics have praised his "gorgeous, elegant prose" and his ability to capture the "passion and humor" of his subjects. As an example, he co-wrote the screenplay for "Last of the High Kings", which was a coming-of-age drama based on the novel by Ferdia Mac Anna.
By 2024, Byrne has authored two major book memoirs amongst other literary endeavors. His first autobiography was written by him in 1994 and was titled "Pictures In My Head". In a series of "cinematic sketches", the book covers his childhood in Dublin, his various odd jobs, and the beginning of his acting career. His second book in 2021, was called "Walking With Ghosts", and used a stream-of-consciousness style to detail out his life.
In 2010, Byrne was appointed as Ireland's first Cultural Ambassador. This role was established by the Irish government to promote Ireland, specifically its arts and culture. Byrne was the public face and a primary organizer of "Imagine Ireland," a year-long program in 2011 that showcased over 400 Irish artists across the United States. He also helped with the development of the Irish Arts Center in New York City. He stepped down from the role at the end of 2011, citing the difficulty of balancing the voluntary position with his acting career.
Although Byrne's father, Dan, was a cooper (maker of barrels) for the Guinness Brewery in Dublin, Gabriel himself never took on the trade. Even though he played soccer for much of his youth, he did not go on to play the game professionally. He holds an honorary Doctor of Arts degree from the National University of Ireland, Galway, and he has played doctors in television. He was never, however, a medical doctor himself. Byrne has starred in various roles as pilots, but has never held this as a job. While Byrne has produced and directed, he has not been the primary individual responsible for the technical assembly of film footage (e.g. the film editor).
