Answer: Forest of Fallen Giants

This is almost always the first boss of the average player's playthrough. He has just over 2500 HP, among the lowest numbers for a boss' HP bar in the game.

Answer: Dark

The Last Giant has tiny resistances to Lightning and Fire, and is completely neutral to Magic. That said, he is extremely weak to Dark. In fact, he is tied with Giant Lord (who is literally the same person narratively) for the biggest weakness in the game, as Dark will do 60% more damage against him. This is also tied with Mytha the Baneful Queen's weakness to Fire.

Sadly, players are very unlikely to actually have any means to deal Dark damage this early in the game. As such, it is scarcely a weakness they will be exploiting.

Answer: Insta-killing

Although it is very, very rare for him to do, The Last Giant has an attack where he will basically fall flat on his front, essentially trying to lay down on the player. If his chest area falls atop the player, it is a guaranteed kill from full health regardless of how much health the player has.

Having said that, this basically never actually happens. Not only is the attack incredibly rare for him to even do, but players are naturally likely to be attacking his ankles, since dealing damage to him is usually impossible otherwise. If they're doing this, The Last Giant simply can't fall atop the player in a way that would instakill them, since the landing space of his chest would be far away from the space his feet would be occupying.

Still though, it can theoretically happen, so players should at least be minimally mindful of the possibility.

Answer: Sellsword Luet

Luet powerstances the Orma's Greatshield and the Reeve's Greatshield, while also wearing very heavy armor to go with the Redeye Ring. The Redeye Ring is meant to attract enemies, so The Last Giant is likelier to attack Luet instead of the player when summoned.

Answer: His equipment

If the player summons Pate for this fight and he survives, they can later encounter him at Earthen Peak. After talking to him here, if he was specifically summoned for and survived The Last Giant, he will give the player his entire armor set, his shield, his spear, and the Ring of Thorns.

His armor set is actually pretty good, sporting solid weight efficiency for the defensive values it offers. Personally, I also just think the set looks really cool.

His spear is an interesting choice for a weapon. It requires 27 Dexterity, so it is a bit of a commitment. But, it uniquely takes Twinkling Titanite to upgrade which can very possibly pair well with whatever weapon the player has started the game with.

His shield, sadly, totally misses the mark. It is a greatshield which is fairly heavy, yet has poor absorptions stats across the board. His shield can safely be skipped out on.

Answer: No

At the present moment of fighting the so-called 'last' giant, there are two perfectly alive giants residing inside the depths of the Black Gulch. It is technically possible to slay them before The Last Giant, but because The Last Giant's title isn't contingent on the player doing this, it is still technically misleading.

Answer: By cutting his arm off

If the player deals half of The Last Giant's total health bar specifically to his arm, the arm will be promptly cut off. This will prevent The Last Giant from weaponizing it later.

Answer: Giant Stone Axe

The Giant Stone Axe requires 45 Strength and gets very so-so scaling in return for that investment. It is a Greataxe, so like all Greataxes, it comes with a sweetspot mechanic. Due to this, this weapon is best wielded two-handed for maximum damage, as this makes landing the sweet spot both easier and more profitable. If two-handed, the player could use this weapon from as low as 22 Strength.

Answer: The Place Unbeknownst

The Soldier's Key does unlock one very important section of Lost Bastille, but is itself not completely necessary to simply reach the Lost Bastille with.

Place Unbeknownst is the name of a bonfire sitting right in front of the Memory of Jeigh, an area where the player fights the Giant Lord, who is a mandatory boss.

Answer: Cardinal Tower

Cardinal Tower is essentially the 'hub' of the Forest of Fallen Giants, a bonfire squarely in the center of the area that the player is likely to use several times, if not more. It is positioned in a way where 'farming' The Last Giant would be convenient, as the player only needs to go down a ladder, then take a short elevator, and they'll be at The Last Giant's door.

Sadly, The Last Giant does not drop anything special on NG+, nor does his boss fight gain any new mechanics like other fights, such as The Lost Sinner.
