Quiz Answer Key and Fun Facts
1. What are the three basic ingredients that define a pancake, wherever it comes from?

Answer: Flour, eggs and milk

While it might be possible to concoct something resembling a pancake from some of those ingredient lists, the usual combination is some type of flour, some kind of milk and the egg that binds it together.
2. How is a pancake usually cooked?

Answer: On a frying pan or griddle

You might be able to cook them on a grill - but not under it, and a batter baked in an oven is a popover or a Yorkshire pudding... and that's a whole other quiz.
3. In England, pancakes are traditionally served on which day?

Answer: Shrove Tuesday

Pancake Day is the day when you use up all the eggs before the beginning of Lent, elsewhere called Mardi Gras, or Fat Tuesday. Nowadays, British supermarkets have to stock extra eggs and milk to be ready for the increased demand!
4. What is the most traditional topping for hot pancakes in England?

Answer: Lemon juice and sugar

Warm pancakes straight from the pan squirted with lemon juice and sprinkled with sugar... Delicious!
5. In Australia and New Zealand they make little pancakes, served cool with butter, jam and whipped cream (if you're lucky). What are these teatime treats called?

Answer: Pikelets

In England these little pancakes are called Scotch pancakes, or sometimes drop scones (because the batter is dropped in spoonfuls onto the hot griddle).
6. In France, you might be served thin pancakes, folded, covered with a hot sauce of sugar and orange, and then flambéed with an orange liqueur. What were they called on the menu?

Answer: Crêpe Suzette

The French word for pancake is crêpe. Traditionally the liqueur is Grand Marnier, but you can use Cointreau. The story goes that the pancakes were being prepared for the future Edward VII of England, and his lady friend Suzette, at Monte Carlo's Café de Paris. The liqueurs accidentally caught fire, and the result was delicious.
7. Poffertjes are tiny pancakes made with yeast, and served with icing sugar and butter. Poffertjes are?

Answer: Dutch

They are cooked in a special poffertjes pan, which has around a dozen or so tiny indentations. This allows them to become puffy, plump, and utterly yummy.
8. The Jewish pancakes called latkes contain which distinctive ingredient?

Answer: Potatoes

Similar potato pancakes are found in many of the cuisines of Eastern Europe. Latkes are traditionally served as part of the menu during the celebration of Chanukah.
9. In Russia, pancakes called Blini are made with yeast, and frequently use which sort of flour?

Answer: Buckwheat flour

Blini are very tasty served with sour cream and caviar. You don't have to use sturgeon caviar, which is a good thing, since the sturgeon is endangered.
10. In Vietnam they eat savoury pancakes called Bánh xèo, which are made with which ingredients?

Answer: Rice flour and coconut milk

These are stuffed with pork, shrimp and bean sprouts and served with fish sauce. Similar savoury stuffed pancakes are common in the various cuisines of South-East Asia and China.
