Answer: Hot and Cold

Hot smoking can take six to twelve hours between 120 degrees and 180 degrees. This yields a drier product. Cold smoking is done at temperatures of 70 and 90 degrees for one to three weeks.

Named after Findon, Scotland, this smoked haddock is considered a breakfast item in the British Isles.
