Quiz Answer Key and Fun Facts
1. What organization was created by the U.S. Congress in 1974 to market, promote, do research and support the American egg farmer?

Answer: The American Egg Board

The American Egg Board (AEB) is responsible for the marketing campaign "The Incredible Edible Egg". The AEB seeks to promote the demand for eggs and eggs products. The AEB has been known to be overly zealous at times. In 2015 the AEB targeted a company that produced an egg substitute and (they say jokingly) ordered a "hit" on the company's president.

The investigation resulted in the president of the AEB being forced into early retirement.
2. The typical hen on average produces between 400 and 500 eggs in their lifetime.

Answer: True

True. A hen's egg production depends on many factors, such as lighting, temperature, nutrition, breed, and stress. The first 18 months are a hen's most productive. The record for the most eggs laid in a lifetime is 1,444.
3. What type of bird lays the world's largest egg?

Answer: ostrich

One ostrich egg is equivalent to about two dozen chicken eggs. One ostrich egg can weigh as much as 2lbs. (4.2 k) and can take up to an hour to an hour and a half to boil. They are rich in protein and other nutrients.
4. Brown eggs contain more nutritional value than white eggs.

Answer: False

False. Both have been found to contain the same nutrients. The color difference in the shells is generic. White feathered hens lay white eggs. Brown feathered hens lay brown eggs.
5. What is a young hen called?

Answer: a pullet

A young hen, less than a year old and not yet able to ovulate is called a pullet. When a female baby chick leaves the nest and goes out on her own she is considered a pullet. Pullets usually have fewer and less shiny feathers.
6. What are scotch eggs?

Answer: boiled eggs wrapped in sausage

Scotch eggs are almost certainly not from Scotland. Origins differ, but the most likely version is that in 1738 an English company "scotched" or coated and seasoned their meat.
Scotch eggs are boiled eggs encased in a bowl of sausage that can then be baked or deep-fried and coated with breadcrumbs.
7. Which of these is said to be one of the most important steps in making easy to peel hard-boiled eggs?

Answer: ice bath

According to many experts, the 5-5-5 method is the best for making hard-boiled eggs. The 5-5-5 method is 5 minutes boiling, 5 minutes resting and, most importantly, 5 minutes in an ice bath. Begin peeling at the wide end and the shell should come off in large pieces, instead of hundreds of exasperatingly small pieces.
8. Found only on the island nation of Cuba, this hummingbird lays the world's smallest egg.

Answer: bee hummingbird

A bee hummingbird female lays two eggs at a time. Each egg is equivalent in size to a small pea. One ostrich egg could house around 20,000 bee hummingbird eggs. For the bee hummingbird one egg represents about 15% of its body weight, while one ostrich egg only represents about 2% of the female ostrich's body weight.
9. What kind of fish produces the most expensive caviar?

Answer: sturgeon

Caviar consists of fish eggs or roe. The sturgeon, or more specifically the beluga sturgeon produces the world's finest caviar. A pound of beluga caviar ranges between $3,000 and $10,000. The majority of beluga sturgeon are found in the Caspian Sea. They are considered an endangered species and their importation into the U.S. has been illegal since 2005.
10. Are eggs from free-range hens more nutritional than eggs laid by caged hens?

Answer: No

No. The nutritional value of an egg is not measured by the farming method used, but by the hen's diet. Free-range or cage-free hens may have a more diverse diet which could increase the egg's nutritional value, but the difference is minimal.
