Answer: Lime Zest

Kaffir lime leaves are very important in Thai cooking and have a wonderful aroma, but using lime zest is a good alternative and will supply the required citrusy flavour. Kaffir lime leaves are difficult to grow and are on a prickly tree, hence their (usually) high price.
2. I am baking a cake, but I realise that I do not have self raising flour. I decide to use plain flour, with 1 teaspoon baking powder added for every 110g of flour. Have I done the right thing?

Answer: Yes

Answer: Margarine and Water

Soy milk is also an option to use with margarine (make sure you use kosher certified margarine as some margarine does contain some dairy content) but some people do not like the taste so water would be a better alternative. Although the sauce will not be as creamy, it is a good alternative to use when people cannot mix meat and milk or for those who are lactose intolerant.

Answer: Ginger

Galangal is a root like ginger but it is a bit larger and more round. It also has a milder taste than ginger.

Answer: Sunflower Oil

Any "flavourless" oil can be used (e.g. grapeseed, soy, canola), all the other oils listed have very distinct flavours and hence are not good replacements. You would usually see this type of oil requested when cooking Asian foods.

Answer: Yes

Agar-agar is based on seaweed and is a common alternative to gelatine. It is not as good as gelatine (texture wise) but is a good vegetarian alternative.

Answer: Dry Sherry

You can also use dry white wine, although Madeira is such a wonderful ingredient it is worthwhile using it. Madeira wine is produced in Madeira (Portugal).

Pressed caviar is a mixture of damaged or fragile eggs pressed through muslin after salting. Keta is orange and is used a lot in Sushi bars. Lumpfish caviar is very small and black. All are similar to caviar but are not as expensive.
9. There is no vegetarian alternative to suet.

Answer: False

Unlike other fat suet is hard and granular, it is the fat that protects an animal's kidneys. There is a vegetarian alternative, made from palm oil, and is as good to use.
10. I want to make pesto but I am all out of basil, what can I use instead?

Answer: All the answers are correct

Although there is no alternative to Basil, some don't like the flavour and sometimes you run out of it, so these are good alternatives. If you need to use basil in a cooked dish you can use oregano.
